Baked Cinnamon and Pear Oatmeal

Hello Darlings,

Today I have for you a healthy, tasty breakfast that will fill you for hours!!

I love oatmeal, yet I rarely make it!  I go through spurts with my food and I was on a yogurt and berries kick for months, but now that the cold weather is here I am craving more comforting, hearty warm breakfast’s like oatmeal.  This oatmeal has it all, it’s baked and reminds me of a crisp.  It’s chock full of fall pears that have been mixed in brown sugar and is sprinkled with cinnamon.  I simply love it!  I love being home on the weekends, just so I can make a different kind of breakfast.  I wonder what this coming weekend I will make?  That reminds me, I’ll be off all next week, so it will be a different breakfast everyday!  Ohhh, now I am just excited!  I guess you can tell that breakfast is my favorite meal of the day.


Oatmeal is such a healthy breakfast, not only does it taste good, but it is full of healthy benefits, like lowering cholesterol,  boosts your immune system, helps reduce the risk of cardiovascular disease, stabilizes blood sugar, lowers the risk of diabetes, and prevents breast cancer.  Talk about lots of wonderful benefits in oats!  I can see why they are so popular!  I love my oats whether it is in oatmeal, granola, cookies or crisps.  It’s such a wonderful grain!!  Have I convinced you to have a big bowl of oatmeal yet?  Maybe this will convince you?

It’s like eating dessert for breakfast!!  You know what else is great about baked oatmeal? The toppings!  It’s so versatile, you can add peanut butter, maple syrup or dried fruit, like raisins to it and man is it good!  I loved the flavor so much in my baked Cinnamon and Pear Oatmeal that I didn’t feel the need to add any additional toppings, but the options are there.

Baked Cinnamon and Pear Oatmeal

A thick and hearty baked oatmeal filled with fresh pears, brown sugar and cinnamon.
Serves: 1
Ingredients
  • ⅓ cup old fashioned rolled oats
  • 1 egg white
  • ¼ tsp pure vanilla extract
  • ¼ tsp cinnamon
  • ¼ tsp baking powder
  • ⅓ cup non-fat milk
  • 1 tsp brown sugar
  • ½ cup (70 grams) pear, peeled, cored, chopped small
  • Optional Toppings:
  • peanut butter
  • raisins
  • granola
  • maple syrup
Instructions
  1. Preheat oven to 350F
  2. Spray a oven safe ramekin with cooking spray; set a side.
  3. In a small bowl add chopped pears and brown sugar; mix together until all the pears are evenly covered in sugar; set a side.
  4. In a small bowl add oats, egg white, vanilla extract, cinnamon, baking powder and stir. Add pear mixture and milk.
  5. Pour oatmeal into prepared ramekin and bake for 20 - 25 until oatmeal is set.

Calories: 212, Fat: 1.9, Cholesterol: 1.6, Potassium: 258.7, Sodium: 221, Carbs: 39.4, Fiber: 4.7, Sugar: 8.1, Protein: 11.7

I never told you, do you like my ramekins?  I got them in the dollar section at Target.  I think I paid $2.50 for two of them.  Do you ever shop in that section of Target?  I love it, I get so many props for my blog, plus it’s great for little gift trinkets.  I like to surprise Jenny with something like a little Hello Kitty gift; such as barretts or stickers.  I know she’s 20 now, but it still makes her smile!  Just like I just bought her an Advent Calendar from Trader Joe’s this past weekend.  It counts down the days till Christmas and when she opens the day, she gets a piece of candy.  She loves those calendars, I buy one for her every year.  I will probably be buying them for her every year until I’m no longer on this Earth!  Funny how some things; age doesn’t matter!  🙂

    Yum! I haven’t ever baked oatmeal before. I always use the stovetop. I don’t know why I never thought to before. Looks so good and wholesome! I will be trying this one for sure!

      I am not sure, I would give it a try, but make sure you use a big enough container, oatmeal grows large in the microwave and makes a big mess.

      Cook Time: 25 minutes

      Total Time: 30 minutes

      Yield: 1

So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.

After reading reviews on a million refrigerators, they all seem like crap. I need your help! Do you have a refrigerator that you recommend?

I saw a Frigidaire one that we are debating on, but not sure? The reviews are good, but says, they were collected from a promotion. So I’m not sure how much I trust that? Anyway, any recommendations that you have would be great!

PS. Sorry mama hasn’t posted in a while. My brother Sully 🐶 who is a 2 year old Yellow Labrador has been diagnosed with Osteosarcoma (bone cancer) in March and has gone through radiation treatment and is currently doing chemo. He’s been really ill and mamas main focus has been taking care of him. She hopes to be back soon.

I have to say my new favorite item is the towel holder. It’s so cute and practical. I don’t have a hand towel rack and I hated leaving my towels on my counter. I saw the towel holder from Target and had to get it. It’s the Hearth and Hand brand.

I added some bunnies for Spring and a touch of pink for some color. The hand towels are from Homegoods. They have so many bunnies and Easter decor. I had to control myself because I was with my husband. I may go back.
