Mint Chocolate Chip Pudding Cookies

Howdy Partners,

I am writing this on Saturday evening so I can get a quick jump on my posts for the week.  I figured if I did this now, for one I wouldn’t snack and two I can focus on exercise and making healthy dinners throughout the week!  After my Saturday indulgence, I am going to start my week out right, starting with a wholesome healthy breakfast!  But today I do not have a healthy breakfast for you, that will be tomorrow, I think?  But I have my Saturday indulgence to share with you!

See these little Guys?  They are extremely dangerous!  Dangerous I tell ya!!  All day they taunted me, telling me to eat me, eat me!!  If you ask me to eat something, I feel the need to say ok, after all how can I say no?  So I ate one, then two, then three, then I thought these taste really familiar what is that taste?  Eat four, eat five and finally on my sixth one, I realized what these cookies taste like.  Ready for this…


They taste like Girl Scout Thin Mints!  I can’t believe I accidentally recreated a cookie that tastes like Girl Scout Thin Mints!  I feel like I discovered a million dollars or something!!  I have to thank Little Jenny for this.  Before she went to work, I asked her if she wanted me to make her any cookies for her and her boyfriend Saturday night and she said, yah, Mint Chocolate Chips.  I think we are all on a mint kick this week!  I wouldn’t have discovered these gems if it wasn’t for her.  I don’t know if I should love her or hate her for this!!  When she came home from work, she took a bite of the cookie and said “Oh My Gosh” with a mouth full of cookies.  Can I take the whole batch with me?  I was happy to give them to her, because if they were here right now, I’d be eating one while I was typing this!!  Just look at them!!

See what I mean about dangerous?  At least the cookies are only 59 calories each!  But having 6 of them, kind of adds up!!  This recipe is also very easy to make!  It’s a basic batch of cookies, but the secret ingredient is Jello Sugar Free Instant Pudding, Fudge flavor!!  I never put pudding in my cookies before, I’ve done cake batter but never pudding.  I am pretty surprised on how well they turn out!!  I am so glad I tried this!!!  You have to try pudding in cookies, it’s crazy good.  It adds a whole new dimension to your cookie!

Mint Chocolate Chip Pudding Cookies

A chocolate cookie with a fudgy center and full of mint chocolate chips. Tastes like a Girl Scout Thin Mint Cookie.
Serves: 44 Cookies
Ingredients
  • 1 cup all-purpose flour
  • 1 pkg. (1.4 oz pkg.) sugar free,instant chocolate fudge pudding mix
  • ½ cup (1 stick) butter, softened
  • ½ cup brown sugar
  • 1 teaspoon baking soda
  • 2 eggs or ½ cup egg substitute
  • ½ tsp. vanilla extract
  • ¼ tsp. peppermint extract
  • ¾ cups mint chocolate chips (I used Nestle Dark Chocolate & Mint Chips)
Instructions
  1. Preheat oven to 350 degrees
  2. Line two baking sheets with parchment paper.
  3. In a small bowl add flour and pudding mix;set a side
  4. In a large bowl add butter and beat for 30 seconds; until creamy. Add brown sugar and baking soda and beat until well combined. Beat in eggs, vanilla and peppermint extract. Gradually beat in flour mixture. Stir in mint chocolate chips
  5. Drop dough by rounded teaspoon 2 inches apart onto prepared baking sheets.
  6. Bake for 10 to 12 minutes or until set. Cool on baking sheets 2 to 3 minutes; remove to wire racks to cool completely.

Do you crave danger?  If you do, then these cookies are for you!  I bet you can’t eat just one!  Ohhh, these would be so good with a Peppermint Latte!  Man, I think I need to make more of these, no I don’t!!  I have no control!  I really need a new hobby!

    Oh my goodness! I LOVE chocolate and mint together.

    I normally make creme de menthe brownies for one of my Christmas “cookies,” but these might have to take over as this year’s mint and chocolate offering!

    Last week, I bought a bag of those Nestle Dark Chocolate and Mint Chips simply because they just looked so tempting as I was strolling through the baked goods isle, and now it looks like they can do a happy dance with some chocolate pudding. I’m sharing with you my new dog bone container that I got from @outshine_co. Oh my gosh Sampson loves it! Mom, move out of the way, I’m taking over!!

Hi all! This is Sammy here! I just have to tell you my Mom now has no excuse not to have bones in the house anymore. This beautiful container hold 5 boxes of my favorite Trader Joe’s bones. My Mom also needs to know that carrots, celery or a piece of lettuce doesn’t cut it! Bones is what I must have!

The container is made of a nice heavy coated carbon steel and holds 12lbs or 54 cups of dog food and bones. 🤩Yes thank you! That is what I’m taking about. The only thing is, the lid is so well fitted and airtight that I can’t get my paws in it. What’s up with that? Not fair! I need access to bones at all times.

My Mom loves the container too because it looks pretty on her counter and even comes with a sticker that she can write my name on. I absolutely love this container! Thank you Outshine Co. for sending this to me, I mean my Mom.

Now that Valentines is over, it’s officially time for spring, at least in my mind. The weather may say otherwise, but I’ve been craving spring colors in my home. I went pretty neutral in my living room for winter, but I think I’m going to add some pastels. Now what color to add?

Last year if you followed me, I spent months trying to decide on what color to use. Ugh, I think I’m in the same boat again this year. I like yellows because it’s a happy color, but I also like pinks and blues. Oh the decisions.

Happy Friday! We did it! Yesterday was a little bi Happy Friday! We did it! Yesterday was a little bit of rough day in my house. Woke up to see my sweet Sampson wasn’t feeling well.  He was just laying around, didn’t get up to greet me, and the biggest sign was he didn’t ask for a bone. You know how he’s obsessed with bones.

Around 9am he perked up and asked for a bone and wanted to go outside to snoop around. He seems to be better, but is still kind of laying around. I just hope he will be okay. He’s 11, and I get so worried. He’s my child.

I’m sharing with you my pretty tulips from Trader Joe’s. They have such a great selection of tulips in array of colors. Though I didn’t see any roses, which is strange. We do not have any plans for the weekend, that I know of, but we have the tendency to wing it.  I’ll keep you posted. Hope you have a wonderful Valentines weekend!

The cutting board is her newest item at her Etsy shop. She engraves different items, like your name, but for me it is flowers. I’ll always keep the cutting board displayed. I think it is far to pretty to use. I’m afraid someone would scratch it.

I wasn’t going to, but I decided to do a small Valentines table setting. I couldn’t resist the small white plates with the little red heart in the middle that I got from @williamssonoma. It was the first thing I bought after my no home decor buying for 30 days.

I love the simplicity of the table. It’s a small space, so I do not like to go to overboard on the decor. I added a little gift of candy hearts to bring together the reds and of course to eat.

Hello everyone! Happy Tuesday! This weekend I clea Hello everyone! Happy Tuesday! This weekend I cleaned my kitchen sink area. It was filling up with daffodils and tulips and my husband said he feels like he’s in a greenhouse. I said they are bulbs, they won’t be there forever. Well they did poop out so I cleaned up my area to make more room for new plants.

You know when you take a photo and you realize something is in the wrong spot, so you fix it and take a photo again? Or maybe you see a crumb, a dog hair tumbleweed and you have to clean up and take a photo again. We’ll here’s my story.

I took a photo of the kitchen sink area and I saw in the photo a smear mark on the dishwasher. So I cleaned the dishwasher. Then I took a photo again and I saw that smear mark again. So I scrubbed the dishwasher and ended up up cleaning all of my cabinets.
😂
I took the photo again and I saw that smear looking mark in my photo. What the heck? I examined the dishwasher and I’m thinking it’s so clean and smooth. I don’t get what that smear mark is. It was driving me crazy!!
🤣
Then it hit me. It was the reflection of the dog food dish in the dishwasher. Sigh.... All that scrubbing and I could have just moved the bowl. Well now I have a clean dishwasher and cabinets.

Hello Monday! We meet again!! And hello everyone! Hello Monday! We meet again!! And hello everyone! Hope you had a nice weekend. I took  advantage of the sunshine and 64 degree weather we had. I did some therapeutic yard work and I planted Pansies, Stock and Ranunculus in the garden. It felt so nice to be outside and to see flowers.

This weekend I finally repotted my Coffee Plant and Dracaena plant. They had roots growing out of the pot. I have no idea how the Dracaena (plant on right) plant survived. The roots were so dry and it was in about a 3” container.  I looked up the plant and it can grow to 10’. Not the care I gave mine. That little plant is about a year old.

If your looking for a low light, easy to care for plant that takes neglect, get a Dracaena. I’m proof that it can take neglect.

Basic repotting plant tips
1. Get a pot about 2-4” larger in diameter then the pot your current plant is in. Make sure it has a drainage hole at the bottom.
2. Use indoor potting soil, preferably organic.
3. Carefully take plant out of current pot, check if the roots are root bound, if so, try to untangle a little bit. Just be gentle.
4. Place plant in new pot with fresh indoor potting soil
5. Give a good watering

Did you watch the Super Bowl? I wasn’t a fan of the game, but I enjoyed some of the commercials. The Cheetos one with Ashton Kutcher and Mila Kunas made me laugh. I didn’t care for the Doritos commercial with my man Matthew McConaughey.
