Today I have for a recipe that I have shared on my blog back in October 2011. That was my first year blogging and my photography was horrible and so was the recipe writing. I have been wanting to re-make this recipe for years and finally did. It is a big hit with my friends and family and I was just embarrassed of how it looked on my blog back then. But not only did the photography improve dramatically, but the recipe is a lot more easier to follow. I have for you a flash back improved recipe; Apple Cinnamon Coffee Cake.
This coffee cake is so light, buttery and you have a sweet apple in every bite. The cake has a wonderful cinnamon and sugar topping and oh the apples. The apples sat in a cinnamon and sugar mixture and brought so much flavor to the cake. It is not overly sweet, but perfectly sweet. I am not a big fan on super sweet desserts. If I want sweet, I’ll take a piece of chocolate, thank you.
I doubled this recipe, which worked like a charm. I made one for home and one to take to work. I am excited to take it to work. My Boss told me that it was one of his favorite cakes, so I am happy to give this to him. What I did different is that I made this in a 9″ round cake pan. The last time I made this, I made it in a square pan. I think in a round pan it looks more elegant, but still tastes as great, no matter what shape it is in.
The recipe is so easy to make too. It only took me about 10 – 15 minutes to prep it and about 23 minutes to bake. The smell of the cinnamon makes the house smell wonderful. The ingredients in the recipe is basic too. I didn’t add anything fancy to it, but it is a fancy cake. 🙂
I have to tell you, I went through a half a bushel of apples this week. I am probably out of apple recipes for a while, which makes me sad. I just love apples. At least I am ending my apple recipes with a classic one. I truly do love this recipe. It is perfect for breakfast, brunch or a snack. I do not feel the need to add any ice cream to this recipe, but vanilla ice cream is always welcome. I did add a dollop of whip cream, which makes the slice of cake look pretty.
Do you have any plans for Halloween this year? With it being on a Monday, it is kind of hard to do anything and it’s suppose to rain, so I have a feeling it will be a quite night, which is fine with me. We do not get to many Trick or Treaters. Though I kind of wish I had a Halloween party at work. That would have been fun. Oh well, there is always next year.
- 1 cup flour
- 1 tsp. baking powder
- ½ tsp. salt
- ¼ cup + 2 tbsp. sugar
- 1 tsp. ground cinnamon
- 6 tbsp. butter, softened
- 1 tsp. vanilla extract
- 1 egg
- ½ cup non-fat milk or milk of choice
- 1 large apple, peeled, diced small (I used Pink Lady, but Granny Smith is perfect)
- Preheat the oven to 350°F.
- Spray a 9-inch square or 9" round baking dish with cooking spray or grease with butter.
- In a small bowl, mix 2 tablespoons of the sugar with the cinnamon; set aside.
- In a medium size bowl, add apples and 1 tablespoon of sugar and cinnamon mixture. Let it rest while you make the cake.
- In a medium bowl, stir together the flour, baking powder, and salt; set aside.
- Using an electric mixer; beat the butter with remaining ¼ cup sugar until light and fluffy. Beat in vanilla extract and egg until blended. Add the flour mixture in three additions, alternating with the milk, beating after each addition until just combined.
- Pour half of the batter in the bottom of the prepared baking dish. Pour apple slices on the batter so they just cover the batter. Spread the rest of the batter over the apples (Note: Just work with the batter, it will come together.) Sprinkle the remaining cinnamon-sugar on top of the batter.
- Bake the cake for 20 - 23 minutes or until it is lightly golden and the cake starts to pull away from the edge of the pan.
- Let cool completely before serving.
- Serving Size: 16 square or 8 large slices
