Giardiniera Salad #SundaySupper

Hi Everyone,

Today for #SundaySupper our mission was to make a Tapas dish.  Well, I’ll be honest with you, I had no clue what Tapas was.  So what does one do when you don’t have a clue?  Google it!  I found out that Tapas are Spanish appetizers that are covered with something, like olive oil, cheese, vinegar, ect…  So today I decided to share with you Giardiniera Salad.  Fresh, crunchy vegetables covered in vinegar and seasoning.
Giardiniera Salad
Giardiniera is a pretty popular little appetizer. It’s full of vegetables such as carrots, cauliflower, sweet bell pepper, celery and peppercini’s and is covered in white vinegar. This is one little appetizer I couldn’t wait to make, especially since I had an over abundance of vegetables in the fridge. Giardiniera Salad
I remember as a kid my Mom would always buy Giardinier salad as a treat. I loved the celery! It’s still my favorite, next to the peppercini’s. Not only is it tasty and a childhood favorite, but it’s super easy to make too!! All you do is heat up some vinegar, water with salt and pour it over your veggies in sterilized jars. You can also can your jars for having all year, but that really didn’t work out for me. I tried to can them and two of the five jars burst. I think it was because the mason jars were to old or maybe to cold? Either way, I got two sealed jars and I put one in the fridge without sealing it. I swear I never have the best of luck when it comes to canning, and I even took a class. You can check out my Giardiniera Salad broken jar here.

A healthy, tangy Italian snack made with fresh vegetables that are covered in vinegar and seasoned with garlic, peppercorns and bay leaf.
Serves: 5 two cup jars
Ingredients
  • 4 cups distilled vinegar
  • 3 cups water
  • 2 tbsp. sea salt
  • 1 medium head of cauliflower, chop from stem and leave florets
  • 2 stalks celery, cut in ¼" slices
  • 2 carrots, peeled, sliced
  • 1 red bell pepper, seeded, membranes removed, sliced into strips
  • ½ cup pickled peppercini's, drained
  • 15 peppercorns, whole
  • 5 bay leaves
  • 5 cloves garlic, whole
  • 5 2 cup sterilized mason jars, with lids
Instructions
  1. In a medium pot, bring vinegar, water and salt to a boil. Turn off and let cool for a few minutes.
  2. Add 3 peppercorns, 1 bay leaf and 1 clove of garlic to each sterilized mason jar. Evenly divide vegetables between each jar, leaving an inch from the top of the jar. Spoon vinegar mixture over jar filling it to ½" to the top. If you run out of liquid, just pour in some white distilled vinegar or even apple cider vinegar. Make sure you take a spoon or a knife and take out any air bubbles you may have in the jars. Top the jars with sterilized lids. You can refrigerate your jars or you can can them.
Notes
It was hard for me to figure out the calories in this dish, so I broke it down by jar, since this makes 5 two cup mason jars.

The Giardiniera Salad is not just good for snacking, but makes a wonderful addition to antipasto salad or goes great with a sandwich instead of chips and is perfect for munching on while watching football games.

    Great recipe! Were the jars as full as in the photos above? If so, they look like they may be too full for processing. Try canning them with a bit more headspace, and that may help 🙂

    A lot of the Mexican restaurants here in TX have pickled veggies like this at the table to munch on. They are usually carrots, onion and jalapenos. Very spicy…I would love to see your version on a Super Bowl spread!!

So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.

After reading reviews on a million refrigerators, they all seem like crap. I need your help! Do you have a refrigerator that you recommend?

I saw a Frigidaire one that we are debating on, but not sure? The reviews are good, but says, they were collected from a promotion. So I’m not sure how much I trust that? Anyway, any recommendations that you have would be great!

PS. Sorry mama hasn’t posted in a while. My brother Sully 🐶 who is a 2 year old Yellow Labrador has been diagnosed with Osteosarcoma (bone cancer) in March and has gone through radiation treatment and is currently doing chemo. He’s been really ill and mamas main focus has been taking care of him. She hopes to be back soon.

I have to say my new favorite item is the towel holder. It’s so cute and practical. I don’t have a hand towel rack and I hated leaving my towels on my counter. I saw the towel holder from Target and had to get it. It’s the Hearth and Hand brand.

I added some bunnies for Spring and a touch of pink for some color. The hand towels are from Homegoods. They have so many bunnies and Easter decor. I had to control myself because I was with my husband. I may go back.

The first thing I added are these stunning customized curtains that I was gifted from @twopagescurtains. Guys, I’m in love! The curtains are just so pretty! I am loving the way it shades the sun, but still lets the light in. Exactly the look I was going for.

The curtains I chose are the “Liz Linen Drape Soft”. They are a linen curtain that is environmentally friendly, hypoallergenic, long lasting, dust preventative, and breathable. They are also wrinkle free. I didn’t have to steam them. They came right out of the package ready to hang. They also come in 38 colors and 7 shadings to choose from. There is an option for everyone.

I’ll be honest I was intimidated on ordering custom curtains. I was so afraid I would order them wrong, but I didn’t. Two Pages has a measurement finder that asks you a few easy questions and boom you have your custom curtain size. It was so simple.

I am sharing my last view of my living room before I take down my Christmas decor. I will leave some of the winter type greens, but I think I’m going to add some blues. I have always liked blue after the holidays. It just gives the room a light and clean look.

I want to say sorry for lack of posting. It’s just so time consuming engaging. I hate spending countless hours on my phone. It has made me physically lazy and it hurts my eyes.
