Hello and Happy Monday,
I am happy last week is behind me and I am starting fresh! Last week I had computer problems at work, root canal, didn’t make my exercise goal and I just felt out of it. But now, I am going to start out positive! So here’s to looking forward!
I made so many good things this weekend I can’t wait to share with you, but Sunday’s night dinner rocked! For the first time I made homemade tortilla’s. They weren’t to hard to make and it was kind of fun! I am proud of myself on this one and to top it off they were good! No, not good, out of this world good!! Nothing like fresh tortilla’s straight from the frying pan! Oh and they smelled like a bakery. I can still smell them, so good! If you never experienced this, you have to, NOW!!
I was rummaging through the cupboards and I hate to say it, but I have no meat in the house and barely any veggies so I had to make due with what I had. So I decided on making vegetarian taco’s. It was quick, easy and very tasty. My husband, the meat and potato’s guy loved it! I was shocked!!! Beside’s one thing is I never run out of is Mexican food! I always hot sauce, salsa and cheese on hand! Those are a must for me!
I had a lot of left over’s, so I know what I’ll be having for lunch tomorrow! He he I can’t wait!!

I’m all smiles and happy right now! I can’t believe how easy tortillas are to make! Why did I wait so long to make them?
Flour Tortilla’s – Healthy Recipes Guru
Ingredients:
- 2 cups of white flour
- 1 1/2 tsp. baking powder
- 2 tsp. vegetable oil
- 3/4 cup warm water
Directions:
Combined all dry ingredients and set aside. Mix the oil and water completely together.
Now add the water and oil to the dry ingredients slowly (1-2 tablespoons at a time). Keep mixing until all of the water/oil mixture is gone. The dough may still be sticky.
Knead the dough until it is smooth – Place the dough aside for 20 – 25 minutes covering it with a dish towel. Then you will separate the dough, and roll them into golf size pieces. Let them stand for 10 minutes.
Preheat the frying pan to medium-high. There is no need for oil or cooking spray. While the pan is heating up–take a dough piece and with the rolling pin flatten the dough out. Continue this until all the dough has been flattened. Start to cook the flat pieces of dough in the frying pan. Watch the tortilla and after 45 seconds flip it to the other side. After another 30-45 seconds on the second side–place the freshly cooked tortilla onto a plate and repeat.

Calories per tortilla: 90, Fat: 1, Cholesterol: 0, Sodium: 247, Carbs: 17, Fiber: .06, Sugar: .01, Protein: 2.3
Vegetarian Taco Filling
Ingredients:
1 tsp. olive oil
1/4 cup onion, diced
1 large bell pepper, diced
1 10 oz can Rotel diced tomatoes with chili’s (I used Habanero, by mistake, hot, hot, hot!) not drained
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon paprika
1 15 oz can black beans, drained and washed
Directions:
In a skillet add olive oil, onions and bell pepper. Cook until tender, about 3 – 5 minutes. Add tomatoes and seasonings, saute for 10 minutes. Add black beans and cook until warm.
Serve with tortillas.
Additional toppings: Romaine Lettuce, Cheese, jalapenos, salsa, hot sauce, avocado, and greek yogurt
Makes 8 – 1/2 cup servings
Calories per serving: 131, Fat: .06, Cholesterol: 0, Sodium: 464, Potassium: 34, Carbs: 23, Fiber: 6.2, Sugar: 2.2, Protein: 7.2
This was so good, looking at these pictures makes me want another one, even though I ate 3 and I am super full! It’s just that good! For the vegetarian seasoning, you could also add roasted corn, zucchini, cilantro or whatever your heart desires. The seasonings in this dish were very good. I would of added the additional ingredients, but like I said, I used what I had on hand. You just have to make the tortilla’s. You can freeze them too. I plan on making big batches for easy cooking!

How crazy cool is it that you MADE your own tortillas! I’m super impressed. The ones at the store are always SO subpar that I refuse to buy them. Guess it’s time to get in the kitchen and make my own! These tacos look awesome!

Lol, I got your messages under spam. If you ever leave a comment there and it goes in spam, thats ok, I still check my spam box! Seems like root canals are the thing for the new year. I would double the peppers too, but my husband is a total onion person and I don’t mind! 🙂
