Giardiniera Salad #SundaySupper

January 19, 2014 By Jennifer @ PB and P Design 79 Comments

Hi Everyone,

Today for #SundaySupper our mission was to make a Tapas dish.  Well, I’ll be honest with you, I had no clue what Tapas was.  So what does one do when you don’t have a clue?  Google it!  I found out that Tapas are Spanish appetizers that are covered with something, like olive oil, cheese, vinegar, ect…  So today I decided to share with you Giardiniera Salad.  Fresh, crunchy vegetables covered in vinegar and seasoning.
Giardiniera Salad
Giardiniera is a pretty popular little appetizer. It’s full of vegetables such as carrots, cauliflower, sweet bell pepper, celery and peppercini’s and is covered in white vinegar. This is one little appetizer I couldn’t wait to make, especially since I had an over abundance of vegetables in the fridge. Giardiniera Salad
I remember as a kid my Mom would always buy Giardinier salad as a treat. I loved the celery! It’s still my favorite, next to the peppercini’s. Not only is it tasty and a childhood favorite, but it’s super easy to make too!! All you do is heat up some vinegar, water with salt and pour it over your veggies in sterilized jars. You can also can your jars for having all year, but that really didn’t work out for me. I tried to can them and two of the five jars burst. I think it was because the mason jars were to old or maybe to cold? Either way, I got two sealed jars and I put one in the fridge without sealing it. I swear I never have the best of luck when it comes to canning, and I even took a class. You can check out my Giardiniera Salad broken jar here.

A healthy, tangy Italian snack made with fresh vegetables that are covered in vinegar and seasoned with garlic, peppercorns and bay leaf.
Serves: 5 two cup jars
Ingredients
  • 4 cups distilled vinegar
  • 3 cups water
  • 2 tbsp. sea salt
  • 1 medium head of cauliflower, chop from stem and leave florets
  • 2 stalks celery, cut in ¼" slices
  • 2 carrots, peeled, sliced
  • 1 red bell pepper, seeded, membranes removed, sliced into strips
  • ½ cup pickled peppercini's, drained
  • 15 peppercorns, whole
  • 5 bay leaves
  • 5 cloves garlic, whole
  • 5 2 cup sterilized mason jars, with lids
Instructions
  1. In a medium pot, bring vinegar, water and salt to a boil. Turn off and let cool for a few minutes.
  2. Add 3 peppercorns, 1 bay leaf and 1 clove of garlic to each sterilized mason jar. Evenly divide vegetables between each jar, leaving an inch from the top of the jar. Spoon vinegar mixture over jar filling it to ½" to the top. If you run out of liquid, just pour in some white distilled vinegar or even apple cider vinegar. Make sure you take a spoon or a knife and take out any air bubbles you may have in the jars. Top the jars with sterilized lids. You can refrigerate your jars or you can can them.
Notes
It was hard for me to figure out the calories in this dish, so I broke it down by jar, since this makes 5 two cup mason jars.

Giardiniera Salad
The Giardiniera Salad is not just good for snacking, but makes a wonderful addition to antipasto salad or goes great with a sandwich instead of chips and is perfect for munching on while watching football games.

Great recipe! Were the jars as full as in the photos above? If so, they look like they may be too full for processing. Try canning them with a bit more headspace, and that may help 🙂

I’m sharing with you one of my Easter tablescapes. I wanted to go simple. I feel when there’s too much on the table, you have a hard time seeing the people across from you. Plus my table is only 5’ long, so I don’t have a lot of space.
🐰
I’m loving the blues and greens. It’s such a pretty color for Spring. I had a whole blue tablescape idea in my mind, but I’m having problems finding pieces that I like. I sure miss Pier1. That was my go to place for table setting decor.

Hi Everyone! The weather is starting to warm up h Hi Everyone! The weather is starting to warm up here and I have Spring fever! #sponsored I’ve been working in the garden beds, planting annuals and enjoying some fresh air and sunshine.
🌸
I freshened up my gorgeous patio set that I got from @rstbrands. I dressed up my table by adding some Ranunculus and a cute little bunny to a tray. Doesn’t scream Spring?
🌸
I also added some throw pillows and a cute blanket to keep you warm on a chilly evening. The Yuri 4 piece patio set is made out of certified eucalyptus wood has held up so beautifully with the heavy rains and winds.
🌸
I love the shade of blue of the cushions, it reminds me of the sunny blue skies. The cushions are also so comfortable to sit on. The best part is that the covers have zippers on them so you can take the covers off and wash them.
🌸
Spring fever is hitting me hard this year and I can’t wait to enjoy the great outdoors.

I’m sharing with you my new dog bone container that I got from @outshine_co. Oh my gosh Sampson loves it! Mom, move out of the way, I’m taking over!!
🐶
Hi all! This is Sammy here! I just have to tell you my Mom now has no excuse not to have bones in the house anymore. This beautiful container hold 5 boxes of my favorite Trader Joe’s bones. My Mom also needs to know that carrots, celery or a piece of lettuce doesn’t cut it! Bones is what I must have!
🐶
The container is made of a nice heavy coated carbon steel and holds 12lbs or 54 cups of dog food and bones. 🤩Yes thank you! That is what I’m taking about. The only thing is, the lid is so well fitted and airtight that I can’t get my paws in it. What’s up with that? Not fair! I need access to bones at all times.

My Mom loves the container too because it looks pretty on her counter and even comes with a sticker that she can write my name on. I absolutely love this container! Thank you Outshine Co. for sending this to me, I mean my Mom.
🐶

Happy Wednesday! Half way through the week. I’m Happy Wednesday! Half way through the week. I’m sharing with you, possibly my last look of my living room in it’s winter decor. I am so ready to add some color.
🪴
Depending on what is going on this weekend, I hoping to go to Homegoods for maybe a new blanket and some pillows. The only thing what color? I’m almost gravitating towards pink?
🪴
Though, yellow may look nice with the green plants. However, I do have so many pillows. Maybe I should look for pillow covers? Less storage. Pillows take up so much room. Oh the decisions.
🪴
I’ve seen some of you share pillow covers from Hobby Lobby. I’ve never seen them at my store, but I’ll do a search when I’m there? I guess that means I’m hitting up Hobby Lobby too. 😂
🪴
Instead of my daily question, I just want to wish and hope everyone is safe with this crazy weather.

I’m sharing with you this cute tiered tray that I got from @dorothyjeandecor. It is the perfect size tiered tray. It’s sturdy, holds a lot and fits perfectly under my kitchen cabinets.
🌷
I decorated it with items that I use on a regular basis in my kitchen, plus pretty little items. Oh and that cute cement pear also came in the March decor box.

Happy Monday! Hope you had a nice weekend. I didn Happy Monday! Hope you had a nice weekend. I didn’t do a heck of a lot. It was kind of relaxing. I binge watched Friends and watched the movie Fools Gold with Kate Hudson and Mathew McConaughey.
🐰
Now that Valentines is over, it’s officially time for spring, at least in my mind. The weather may say otherwise, but I’ve been craving spring colors in my home. I went pretty neutral in my living room for winter, but I think I’m going to add some pastels. Now what color to add?
🐰
Last year if you followed me, I spent months trying to decide on what color to use. Ugh, I think I’m in the same boat again this year. I like yellows because it’s a happy color, but I also like pinks and blues. Oh the decisions.
🐰
I haven’t seem to much inspiration in the stores, though Target seems to have yellows and corals, plus a lot of neutrals. I’m seeing a lot of boho and woods. I do like woods with greenery.
🐰
What color doing you like to use in your home for Spring?

Happy Friday! We did it! Yesterday was a little bi Happy Friday! We did it! Yesterday was a little bit of rough day in my house. Woke up to see my sweet Sampson wasn’t feeling well. He was just laying around, didn’t get up to greet me, and the biggest sign was he didn’t ask for a bone. You know how he’s obsessed with bones.
🐶
Around 9am he perked up and asked for a bone and wanted to go outside to snoop around. He seems to be better, but is still kind of laying around. I just hope he will be okay. He’s 11, and I get so worried. He’s my child.
🐶
I’m sharing with you my pretty tulips from Trader Joe’s. They have such a great selection of tulips in array of colors. Though I didn’t see any roses, which is strange. We do not have any plans for the weekend, that I know of, but we have the tendency to wing it. I’ll keep you posted. Hope you have a wonderful Valentines weekend!

Hello Friday’s Eve! Today after work I’ll most Hello Friday’s Eve! Today after work I’ll most likely be heading to Trader Joe’s and I have to get my husband a Valentines gift. I would get him his favorite, chocolate, but he bought himself a ton of chocolate last weekend, so I’ll have to think of something else. Maybe he’ll like flowers from Trader Joe’s? Lol
🌸
Speaking of flowers, check out my new, gorgeous marble and wood cutting board that I got from my friend Brantley from @thesassyoak. I love the engraved flowers in it. It is so pretty.
🌸
The cutting board is her newest item at her Etsy shop. She engraves different items, like your name, but for me it is flowers. I’ll always keep the cutting board displayed. I think it is far to pretty to use. I’m afraid someone would scratch it.
🌸
Do you use cutting boards or just use them as display?
