Eggnog Banana Bread with Boozy Rum Glaze

Hi Everyone,

I have to tell you something I find so funny.  My dog Sampson follows me everywhere!  You always know he’s following you because he doesn’t lift his feet when he walks, it’s kind like the sound of corduroy pants rubbing together.  I walk slow and I hear a slow swish, swish, swish sound, then I walk faster and the swishing gets faster and louder.  It’s kind of comical, and kind of scary, kind of like being chased by someone, the faster you go, the faster he goes.  Oh my little boy!!  I really need to snap some current picture of my dogs.  My photos are so old, but they are not photogenic!  They never stay still for a picture!  My last dog Doodles, loved having her photo taken, but not these dogs!  They tell me the camera is for taking pictures of food Mom, not of us!!

Today I have for you a boozy Eggnog Banana Bread made with Bacardi Gold Rum!  Yum!  I made this bread especially for my Husband since you know me and eggnog, blah!   Since my Husband bought eggnog for me to use for my holiday recipes, I figured I better use it up soon before it goes bad.  While I was rummaging through my cupboards I saw some banana’s that needed to be used soon and I normally make a simple fruity banana bread, but then I thought, huh, why not eggnog banana bread?  So I whipped it all together and presto, Eggnog Bread!


I decided when I made the bread that it should have a sweet, sweet glaze dripping over it. I made the glaze with rum, eggnog, nutmeg and powdered sugar.  I did do a sampling of the glaze and I can tell you that it is so goooooood,  I could just eat it right up, all of it!!  Maybe I do like eggnog? It just has to have rum in it?  he he

This is the second time I made the recipe, the first time I omitted the greek yogurt and apple sauce that I normally use because the batter seemed awfully liquidy.  After making it, my Husband said the flavor was perfect but the bread was rubbery.  He said he would still eat it, but he didn’t like the texture and he felt it wasn’t blog worthy.  That is what happens when you try to cut to many calories and not add yogurt or fat to the recipe.  I’d rather up my calories a little on a recipe then have it taste bland or rubbery, so in went the canola oil and yogurt and a pinch more flour.  Way better!!!  The bread is moist, full of flavor and simply perfect!!!  I am so glad I decided to remake it.

I have to admit even though I don’t like eggnog, I really enjoyed the bread.  I had to sample it for texture and taste and I was pleasantly surprised how good it is.  So good that I ate a quarter of a loaf.  I was pretty proud and pretty stoked to come up with this recipe.  I also think the bread turned out so pretty and best of all my Husband loved it!  I couldn’t be happier!  This would be a wonderful bread to serve at Christmas time!   I can see it on a table at brunch or giving it away as a hostess gift.

Eggnog Banana Bread with Boozy Rum Glaze

A sweet and moist holiday quick bread made with eggnog, bananas and rum, topped with a sugary eggnog and rum glaze.
Serves: 15 slices
Ingredients
  • 1 Cup All Purpose flour
  • ¾ whole wheat pastry flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 Cup banana,mashed
  • 3 egg whites
  • ½ Cup sugar
  • ½ Cup eggnog, light
  • ¼ cup greek yogurt, plain
  • 1 tbsp. canola oil
  • 1 tbsp. rum or ¼ tsp. rum extract
  • ¼ tsp. nutmeg
  • **Glaze**
  • ½ cup powdered sugar
  • 1 tbsp. egg nog
  • ¼ tsp. nutmeg
  • 1 tsp. rum
Instructions
  1. Preheat oven to 350F
  2. Spray 1 loaf pan or three mini loaf pans with cooking spray; set aside
  3. In a large bowl add flours, baking soda, and salt; mix and set aside.
  4. In a medium bowl, add banana, egg whites and sugar, mix together until incorporated. Add eggnog, greek yogurt and canola oil; mix until combined. Stir in rum and nutmeg; mix until combined.
  5. Make a well in the center of the flour mixture and slowly add the banana mixture and fold together until combined. Do not over mix.
  6. Evenly divide batter into prepared mini loaf pans or pour into one large loaf pan.
  7. Bake mini loafs for 30 - 35 minutes, bake large loaf for 50 - 60 minutes. Insert a toothpick into center of bread, comes out clean, bread is done.
  8. Let the bread cool for 5 minutes, then take loaves out of pan and let them cool on a cooling rack.
  9. For the Glaze: In a small bowl add powdered sugar, eggnog, nutmeg and rum. Mix until combined and evenly pour over cooled bread.

    i agree – better to make it a few more calories and be worth eating than to be weird and not even enjoy the calories! Looks delicious to me!

    This looks awesome! My hubby LOVES eggnog and has a big ole sweet tooth, so I know he’d love this!

    My dog, Buddy, is the same way – sometimes he is following so closely that he gets tangled up in my feet and I trip right over him! It’s sweet though! 😉

      I know our babies are always int he way! My Husband knows when I have been cooking, because the dogs are tired at night because they can’t nap in the day because they are afraid they will miss out on food opportunity!! lol

    I have no desire to ever drink eggnog, but I would have no problem eating slice after slice of your delicious eggnog banana bread. So glad you glazed it, too….mmmmmmm.

Happy Wednesday! This past weekend I did a little Happy Wednesday! This past weekend I did a little furniture rearranging in my dining room. I decided to move my kitchen cart to the opposite side of my room, and I love it in its new spot.

If you remember, I fixed the nail holes in this wall, so I could hang a normal picture. I love how centered my nail is. lol It’s the little things.

Now before anyone says anything. I covered my light switch with my picture. I never use it, so it doesn’t effect me.

Speaking of pictures, how gorgeous is my sign from @krumpetshomedecor? It’s a fabulous size and I am calling it the moving sign. If you watched my reel last week, you will see that I used the spider side of the sign in my kitchen. I thought the fall side would be perfect in my dining room. Now I actually plan to move the sign again to my living room when I bring out the Fall bins. I have an idea in my head.

Happy Tuesday! I thought I would share one last lo Happy Tuesday! I thought I would share one last look at the guest bathroom before the Fall season arrives. Pretty soon it will be filled with pumpkins.

I actually have not changed any of the decor in the bathroom since February of this year. I love how it looks and didn’t want to change it.

The plants in the tub were in my living room, but with having puppies, they were eating them and they are poisonous, so I put them in the tub and they have survived and doing well.

The rug on the floor is from @studiomoutdoor. It’s a vinyl rug that is so perfect for cleaning up after the dogs. Plus they don’t eat these rugs! Yes, they have eaten all the rugs in my house, except for the dining room rug. Sigh….

Happy Friday Eve! So happy it’s almost the weeke Happy Friday Eve! So happy it’s almost the weekend. This Saturday we have to take the dogs to the vet. Oh man! That’s a thing. The dogs drop dead on the driveway and refuse to go in the car. They do this going there and back. It’s a comedy scene, and so embarrassing. Not fun! lol

I put together a little vignette for my kitchen counter. You are probably thinking, she always shares the kitchen. It’s because I do my day job at the kitchen counter and I get all these new ideas in my head and I just have to share.

I am loving the blue with the yellow and the green. It feels light and fresh. I also love my new candle from @candleberrycandle the scent is Bergamot Amber. It maybe my favorite scent from the collection. The scent is a mix of blue amber and oak with a vibrant burst of citrus and exotic florals.

Happy Wednesday! I am excited to finally share wit Happy Wednesday! I am excited to finally share with you my coffee bar. I kept starting to decorate it, then I’d get stuck and then the season would change and there it would sit for months bare. lol

I love the new look. It’s simple, has what we need and looks light and fresh. My husband actually noticed and said it was his favorite coffee bar yet. Then brings up how he hates the white fluffy stuff I use on the shelves for Christmas. I told him, I’m using the snow again this winter. He gives me the look.

Hi Everybody! Happy #tiptuesday. I am sharing with Hi Everybody! Happy #tiptuesday. I am sharing with you a simple way to make your floral displays last longer. I learned this trick from a local florist.

Ingredients:
4 cups of water (1 liter)
3 tbsp. Sugar
2 tbsp. Distilled Vinegar

Add sugar and vinegar to water. Stir until dissolved. Add flowers. Try to take off as many leaves as possible.

The sugar nourishes the flowers and the vinegar will stop bacteria growth.

After I put this arrangement together, I decided to take out the yellow flowers and cut the bouquet down a little. I think it looks better. I bought these flowers from the farmers market.
