Mini Apple Cinnamon Rolls #SundaySupper

Hi Everyone,

Today for #SundaySupper we have to make something that is a Fall food!  Ohhhh, I love the Fall foods!  Butternut Squash, Pumpkins, Apples, Sweet Potatoes and plain old warm comfort food.  It’s probably one of my favorite times of the year, but only for the food!!  So my Fall recipe that I have for you today is my Mini Apple Cinnamon Rolls.  Oh baby, so good, so easy and don’t contain yeast!!  You gotta love that!!

Mini Apple Cinnamon Rolls

I first have to let you know I cooked these babies a tad long, well actually I didn’t. Since I got my stove it has been cooking everything way quicker then what a normal recipe does. I have made these cinnamon rolls before and I found about 13 minutes works perfect, but after 7 minutes in my oven they got a little toasty. So please don’t let the darkness of the rolls make you turn away, they are truly awesome!!
Mini Apple Cinnamon Rolls

I got this idea from my Better Homes and Gardens magazine that I bought about two years ago. I have changed up this recipe a few times too. It’s one I normally make on Christmas morning. Little Jenny loves them. I don’t mind getting up early to make them because they are a snap to whip together. No yeast needed and no rising time is what makes the rolls a breeze to make. They are light, loaded with flavor and positively sinful at only 39 calories each. You could eat four or more and not worry about the guilt!!

For a change-up to this recipe I used shredded apple in them. I love apples and I think nothing goes better with apples than cinnamon. A perfect duo! But then again pumpkin and cinnamon make a nice combo too! As you can tell lately I have been on a pumpkin and apple kick! I just can’t help it, it’s so good!!!

For breakfast I decided to serve them with warmed maple syrup over the top. Oh my gosh! The maple syrup went into every crease of the roll. It’s so good!! This make a fantastic Fall breakfast!! Sigh… I wish they all didn’t get eaten.

A low calorie, whole wheat, no yeast needed cinnamon roll filled with fresh apples and cinnamon and sugar.
Serves: 24 mini cinnamon rolls
Ingredients
  • 1 cup white whole wheat flour
  • 1 tbsp. brown sugar
  • 2 tsp. baking powder
  • ⅛ tsp. salt
  • 4 tbsp. margarine or butter, divided (I used Brummel and Brown)
  • ⅓ cup non-fat milk
  • 3 tbsp. vanilla infused sugar or granulated
  • 1 tsp. cinnamon
  • ¼ cup apple, shredded, patted dry (43 grams)
Instructions
  1. Preheat your oven to 400 degrees
  2. Spray a mini muffin pan with cooking spray; set aside.
  3. In the large bowl whisk together the flour, 1 tablespoon of brown sugar, baking powder, and salt.
  4. Cut in the butter and mix together with a fork or your hands, until the mixture is crumbly.
  5. Add the milk and mix with wooden spoon until dough pulls a way from the bowl.
  6. In a small bowl, mix cinnamon and 3 tablespoons of sugar together; set aside.
  7. In a microwave safe dish, melt 2 tbsp. margarine or butter. I found 10 seconds works great, set aside.
  8. On a lightly floured surface, roll the dough out into a thin rectangle shape, about 5 x 19. Brush with melted butter and top with apples, and sprinkle the cinnamon and sugar mixture over the top.
  9. Carefully roll up the dough the long side and with a sharp straight edge knife cut dough into 24 pieces. I found cutting from the middle and making 12 cuts on each side. that way you get an even amount.
  10. Place each cinnamon roll in a cup of your prepared muffin pan.
  11. Bake in oven for 7 - 15 minutes (mine only needed 7 minutes because my oven cooks fast, normally it takes 15 minutes), until cinnamon buns are lightly golden. Let cool for a couple minutes and then place on a cooling rack to cool. Serve with powdered sugar or a drizzle of maple syrup.
Notes
Note: Check the cooking time, it should take about 12 minutes or so, but start to check around 7 minutes. My oven cooks fast and 7 minutes cooked mine little long.

    These don’t seem to hard to make! Cinnamon rolls are a bit intimidating to me for some reason, but I like the sound of these no-yeast ones! Plus apples and cinnamon…I mean, come on, no brainer!

    Jennifer, these mini apple cinnamon rolls look divine! They’re not too dark at all. In fact, I love that they’re probably wonderfully crispy on the outside and soft on the inside. Fall is my favourite season for so many reasons but probably number one is the hearty comfort food. Just thinking about sinking my teeth into one (or four) of these is making me feel all warm ‘n cozy!

Hello Thursday!! Two more days to go, but who’s Hello Thursday!! Two more days to go, but who’s counting? I am!  I just saw that my nursery got some Iceland Poppies and I think I need to go get some for the garden. We’re supposed to get rain, so it’s a great time to get them planted and I won’t have to worry about watering them.

Speaking of flowers, I was gifted this gorgeous bouquet of silk flowers from @prestige.botanicals. Don’t they look so real? I am impressed with the quality of the flowers.

The flowers remind me of an English Cottage Garden. The only problem with them is I need more. Like a lot more!! They are by far the best faux flowers I have ever seen. The flowers are so soft and feel so real. The foliage is the most beautiful green color.

My husband thought I bought myself some fresh flowers, he couldn’t believe how real they look. I just checked on there website and some flowers are on sale for 30% off. The perfect time to get more.

Happy Wednesday! For a short week, I sure am tired Happy Wednesday! For a short week, I sure am tired. I think I need more coffee and better food. I keep snacking and that is such a bad habit for me. I’m going to try to be better starting today.

I’m just loving my tray and riser by the sink. It’s so bright and happy. The only thing is, I look at it a bazillion times a day and I seemed to have neglected my coffee plant on the tray.

I totally forgot to water it and the leaves fell flat and got crispy. I’m happy it perked back up. This is one of the plants that I need to repot. The roots are growing out of the pot. I hope to get a little pot for it this weekend.

Things have been pretty quite here, but boy we had some serious high winds with gusts up to 60mph. The wind blew so many leaves off our citrus trees and broke my salvia plant. The poor plant can’t get a break. It finally started to grow back after Sampson stepped on it.

Saturday morning I went to Trader Joe’s, and oh my gosh they had the most gorgeous tulips. I was so surprised to find them so early in the year. All those beautiful colors just made me happy. I picked up two bundles to take home with me. I just had too! Shhhh, some daffodils, a plant and planted tulips made it in my cart. I am unclear how that happened?🤷🏼‍♀️

I know, I know, I’m on the 30 day, no buying home decor challenge. But are flowers really decor? They are more of a “put a smile on your face because you know Spring is coming” kind of flower. I’ll make any excuse I can.

I did go to Michaels yesterday with my husband and I walked out empty handed. I even saw some really cute decor, but I told myself no. Today is day 18! You do realize, we are going shopping on the 31st.

Happy Friday!  Time to do the happy dance! I don’t have any major plans this weekend, which is nice. But I do think I’ll be cleaning out the pantry. It became a mess during the holidays.

I’m ending the week with my little friend Woody. Woody is a Nuttall Woodpecker that spends the night in our birdhouse. He comes home at dusk and leaves at sunrise. So right now Woody sleeps just over 14 hours. I have noticed the days are getting longer, as he goes to bed about two minutes later every night. Yes I watch. lol
🪶
My husband said Woody leaves in the morning to go to work and comes home after work. I think he leaves in the morning to go visit his girlfriend. They spend the days flying, holding wings as they soar in the air together.

I’m actually surprised we have a woodpecker since they normally like to hang around the California Oak Woodland trees. We don’t have oak trees where I live, at least that I know of. Woody is also a California bird, they pretty much stays within the state.

In the first video; Woody is making the hole bigger on the birdhouse so he could fit in. He was at it for awhile. If you listen to the video, you can here him pecking. He spent the 1st night in the blue birdhouse, then changed his mind to the cedar birdhouse. He’s been with us for 7 nights so far.

The second video is Woody coming home and going to sleep. We are just full of joy seeing him come back. My husband didn’t think birds lived in a birdhouse, and he is so excited to see one actually use the birdhouse he hung. For a man who didn’t want bird feeders, he gets so excited to see them. If birds are in the yard, he won’t go outside because he doesn’t want to disturb them.

The two photos were captures I got. He actually didn’t freak out and leave when he saw me. I was about 5’ away from him.

I know this is not decor, but the birds just make me so happy.
