Hi Everyone,
Today for #SundaySupper we have to make something that is a Fall food! Ohhhh, I love the Fall foods! Butternut Squash, Pumpkins, Apples, Sweet Potatoes and plain old warm comfort food. It’s probably one of my favorite times of the year, but only for the food!! So my Fall recipe that I have for you today is my Mini Apple Cinnamon Rolls. Oh baby, so good, so easy and don’t contain yeast!! You gotta love that!!
I first have to let you know I cooked these babies a tad long, well actually I didn’t. Since I got my stove it has been cooking everything way quicker then what a normal recipe does. I have made these cinnamon rolls before and I found about 13 minutes works perfect, but after 7 minutes in my oven they got a little toasty. So please don’t let the darkness of the rolls make you turn away, they are truly awesome!!
I got this idea from my Better Homes and Gardens magazine that I bought about two years ago. I have changed up this recipe a few times too. It’s one I normally make on Christmas morning. Little Jenny loves them. I don’t mind getting up early to make them because they are a snap to whip together. No yeast needed and no rising time is what makes the rolls a breeze to make. They are light, loaded with flavor and positively sinful at only 39 calories each. You could eat four or more and not worry about the guilt!!
For a change-up to this recipe I used shredded apple in them. I love apples and I think nothing goes better with apples than cinnamon. A perfect duo! But then again pumpkin and cinnamon make a nice combo too! As you can tell lately I have been on a pumpkin and apple kick! I just can’t help it, it’s so good!!!
For breakfast I decided to serve them with warmed maple syrup over the top. Oh my gosh! The maple syrup went into every crease of the roll. It’s so good!! This make a fantastic Fall breakfast!! Sigh… I wish they all didn’t get eaten.
- 1 cup white whole wheat flour
- 1 tbsp. brown sugar
- 2 tsp. baking powder
- ⅛ tsp. salt
- 4 tbsp. margarine or butter, divided (I used Brummel and Brown)
- ⅓ cup non-fat milk
- 3 tbsp. vanilla infused sugar or granulated
- 1 tsp. cinnamon
- ¼ cup apple, shredded, patted dry (43 grams)
- Preheat your oven to 400 degrees
- Spray a mini muffin pan with cooking spray; set aside.
- In the large bowl whisk together the flour, 1 tablespoon of brown sugar, baking powder, and salt.
- Cut in the butter and mix together with a fork or your hands, until the mixture is crumbly.
- Add the milk and mix with wooden spoon until dough pulls a way from the bowl.
- In a small bowl, mix cinnamon and 3 tablespoons of sugar together; set aside.
- In a microwave safe dish, melt 2 tbsp. margarine or butter. I found 10 seconds works great, set aside.
- On a lightly floured surface, roll the dough out into a thin rectangle shape, about 5 x 19. Brush with melted butter and top with apples, and sprinkle the cinnamon and sugar mixture over the top.
- Carefully roll up the dough the long side and with a sharp straight edge knife cut dough into 24 pieces. I found cutting from the middle and making 12 cuts on each side. that way you get an even amount.
- Place each cinnamon roll in a cup of your prepared muffin pan.
- Bake in oven for 7 - 15 minutes (mine only needed 7 minutes because my oven cooks fast, normally it takes 15 minutes), until cinnamon buns are lightly golden. Let cool for a couple minutes and then place on a cooling rack to cool. Serve with powdered sugar or a drizzle of maple syrup.

Ohhhh weeeeeeeee, I love Fall food! I am so excited to see what everyone makes. I get all excited with the changing of seasons because so many different foods are available, but you’ll be hearing me in the spring when strawberries hits the Farmers Market. I’m pretty predictable, but I get so excited every year for my seasonal produce.

Jennifer, these mini apple cinnamon rolls look divine! They’re not too dark at all. In fact, I love that they’re probably wonderfully crispy on the outside and soft on the inside. Fall is my favourite season for so many reasons but probably number one is the hearty comfort food. Just thinking about sinking my teeth into one (or four) of these is making me feel all warm ‘n cozy!
