Peanut Butter Chocolate Chip Granola Cookies #SundaySupper

August 18, 2013 By Jennifer @ PB and P Design 84 Comments

Hi Everyone,

Wow, Sunday already, where did the time go?  Can you believe that some kids are back to school and others will be starting soon?  Summer just goes way to quick.  Speaking of school, today on #SundaySupper we had to create a dish that you can pack for lunch or take a meal to go.  I was debating what to make for this one, since my Husband and I take lunch everyday, but our lunches are pretty boring.  Mine is a typical salad with a piece of fruit.  My Husband is a salami sandwich with cheese.  He eats the same sandwich everyday, for years.  How boring is that?  Anyway, I decide on making healthy, good for you Peanut Butter Chocolate Chip Granola Cookies.  Let me tell you, this recipe did not come easy.

Peanut Butter Chocolate Chip Granola Cookies

Let me explain how these cookies came about.  I received an e-mail from Cooking Light that were these beautiful granola wedges.  After this e-mail sat in my in box for two months I decided to make them.  I read the reviews and people said they tasted good but stuck to the pan.  So with that in mind I sprayed a ton of cooking spray in my pie dish.  Made the granola wedges, with a few modifications, you know I had to healthify it and you know what, they didn’t stick.  When I let them cool, they were super soft.  I decided to put them in the refrigerator to harden up a bit and the next morning I was putting them in my Husbands lunch and they stuck like crazy to the pan.  I ended up giving my Husband granola bits.  He said they tasted great but it was a bag of crumbs.  I know!  So I tried to make them again in cookie form and they fell flat.  I posted the picture on Instagram.  I decided to change the whole recipe and finally it worked and that is how I came up with Peanut Butter Chocolate Chip Granola Cookies.  I guess the third times a charm.  Here’s a picture of the granola wedges I made. Chocolate Almond Granola Wedges

These granola cookies are perfect for lunches, snacks and fans of peanut butter and chocolate.  Ummm, who isn’t a fan of peanut butter and chocolate?  These cookies taste like peanut butter granola bars but in cookie form.  They are healthy, made with natural sugar, vegan and even gluten-free.  They are the perfect snack and the cookies are a nice fat size.

Peanut Butter Chocolate Chip Granola Cookies

They are so easy to make, just one bowl does it all.  To cut out the fat out of the cookies, I used applesauce instead of butter.  I also used maple syrup and stevia to sweetened up the cookies, after all a cookie needs to be sweet otherwise it is boring.  For some crunch I added some honey roasted peanuts.  I just love these cookies.

A healthy, vegan granola cookie filled with peanut butter and chocolate chips. Makes for a perfect snack and goes nicely in lunches.
Serves: 16 Cookies
Ingredients
  • ½ cup apple sauce, unsweetened
  • ¼ cup peanut butter
  • 2 tbsp. maple syrup
  • 1 tsp. stevia (2 pkts)
  • ½ tsp. vanilla extract
  • ½ tsp. salt
  • 2 tbsp. almondflour
  • 1 cup old fashion oats(I used gluten free)
  • 2 tbsp. honey roasted peanuts, chopped small
  • ¼ cup mini semisweet chocolate chips
Instructions
  1. Preheat oven to 350°
  2. Line a baking sheet with parchment paper
  3. In a medium bowl; add applesauce, peanut butter, maple syrup, stevia, vanilla extract, and salt; mix well. Stir in almond flour, oats, peanuts and chocolate chips; mix until everything is incorporated.
  4. The batter will be wet, with a cookie scoop, scoop a heaping 2 tablespoon size of batter onto prepared cookie sheet. Since the cookies won't rise you can place them close together, about an inch apart.
  5. Bake for 10 - 13 minutes until the cookies are slightly golden. Let them slightly harden on cookie sheet and place on a cookie rack to cool.

You’re right, Jennifer. Who doesn’t love a chocolate and pb combo? Especially when so many other yummies like oats and maple syrup are involved.

Bless you for persevering and creating the perfectly sweet but healthy snack =)

Happy Thursday! This week is just flying by, which Happy Thursday! This week is just flying by, which is okay by me. Yesterday I worked on my bedroom and it feels so good having a clean bedroom. It was a chore that I needed to get done.
🐾
My inspiration was my new pillows that I got from @downlitebedding. The name of the pillow says it all “Ahhhhhmazing™ down alternative pillow” and they are amazing.
🐾
The pillows are so soft, plush and are hypoallergenic. They are easily molded so you position your neck, head and arms. The pillows are also washable and OEKO-TEX® Certified Textiles Are Certified Free Of Harmful Chemicals.
🐾
I’ll be honest, Downlite Bedding are the only pillows that I sleep with. They are fabulous and will last for years. I highly recommend them. They won’t disappoint you. Downlite Bedding was nice enough to give my followers a 20% off discount code to there shop: DYGEN20.

Do you sleep in your stomach, back or side?

Hello! I have to tell you that I love summer. It’s my favorite season. I love the sun, hot weather, shirts and flip flops. I could just spend all day outside.
🌻
One of my favorite things to do in the summer besides gardening is going to the Farmers Market. There is something about the atmosphere with people walking around with bags in hand, the smell of kettle corn and everyone is so happy.
🌻
Besides the atmosphere, you can’t beat the freshly grown produce. It’s mind blowing how different it tastes, then what you get in the store. You almost forget what a strawberry is suppose to taste like until have it at the Farmers Market. Plus you are supporting your community. It’s a good feeling all around.
🌻
I highly recommend going to the Farmers Market and pick up so corn. Soooooo good!! Stock up on your fruits and veggies and freeze it for winter.
🌻
My beautiful “Summer” cutout sign is from @krumpetshomedecor and it’s also the deal of the week. You get an extra 10% off with code: PBANDP. Link is in my bio.

Happy Tuesday! Hope you are having a great start t Happy Tuesday! Hope you are having a great start to the week. It’s been busy over here. The work emailed really piled up when I was off, 162 of them. Ugh.
🌸
I’m sharing with you my last photo of my peonies. I’m so sad that they didn’t last. I got about 6 days from them. I guess that’s means I need to go to Trader Joe’s and get more before peony season is over.
🌸
Do you have any summer vacation scheduled this year?

Happy Monday!! It’s back to work for me. I’ll Happy Monday!! It’s back to work for me. I’ll be counting down to my next vacation, which will be the week of the 4th of July. I will tell you, it felt so nice not having any plans and doing work in the garden.
🌻
This weekend I finally made it to the Farmers Market and I picked up these amazing sunflowers. They are such a happy flower.
🌻
When I got them, I couldn’t resist doing a flowers in the sink photo. I haven’t done one of these since Fall. Now I may have to go back to the Farmers Market next weekend because they had so many flowers and most were only $4.00 a bundle.

Happy Friday! My vacation is officially over and I Happy Friday! My vacation is officially over and I pretty much spent the whole week working in my garden, so I apologize for all the flower photos.
🌸
This is a view of my fenced in garden. The flowers on the left are zinnias, and next to them is beardtongue and in the background, butterfly bush. In about a month or so, this background will pop with lots of orange from my Mexican sunflower and yellow from the black eyed susan. I just hope my black eyed susan’s make it. They are struggling.
🌸
I have to say I have been enjoying working in the garden. It’s therapy to me. It just makes me feel good to sit back and see all your hard work start to bloom. I can’t wait to see what the garden looks like a month.
🌸
What do you like to do that you consider your therapy?
