Peanut Butter Chocolate Chip Granola Cookies #SundaySupper

August 18, 2013 By Jennifer @ PB and P Design 84 Comments

Hi Everyone,

Wow, Sunday already, where did the time go?  Can you believe that some kids are back to school and others will be starting soon?  Summer just goes way to quick.  Speaking of school, today on #SundaySupper we had to create a dish that you can pack for lunch or take a meal to go.  I was debating what to make for this one, since my Husband and I take lunch everyday, but our lunches are pretty boring.  Mine is a typical salad with a piece of fruit.  My Husband is a salami sandwich with cheese.  He eats the same sandwich everyday, for years.  How boring is that?  Anyway, I decide on making healthy, good for you Peanut Butter Chocolate Chip Granola Cookies.  Let me tell you, this recipe did not come easy.

Peanut Butter Chocolate Chip Granola Cookies

Let me explain how these cookies came about.  I received an e-mail from Cooking Light that were these beautiful granola wedges.  After this e-mail sat in my in box for two months I decided to make them.  I read the reviews and people said they tasted good but stuck to the pan.  So with that in mind I sprayed a ton of cooking spray in my pie dish.  Made the granola wedges, with a few modifications, you know I had to healthify it and you know what, they didn’t stick.  When I let them cool, they were super soft.  I decided to put them in the refrigerator to harden up a bit and the next morning I was putting them in my Husbands lunch and they stuck like crazy to the pan.  I ended up giving my Husband granola bits.  He said they tasted great but it was a bag of crumbs.  I know!  So I tried to make them again in cookie form and they fell flat.  I posted the picture on Instagram.  I decided to change the whole recipe and finally it worked and that is how I came up with Peanut Butter Chocolate Chip Granola Cookies.  I guess the third times a charm.  Here’s a picture of the granola wedges I made. Chocolate Almond Granola Wedges

These granola cookies are perfect for lunches, snacks and fans of peanut butter and chocolate.  Ummm, who isn’t a fan of peanut butter and chocolate?  These cookies taste like peanut butter granola bars but in cookie form.  They are healthy, made with natural sugar, vegan and even gluten-free.  They are the perfect snack and the cookies are a nice fat size.

Peanut Butter Chocolate Chip Granola Cookies

They are so easy to make, just one bowl does it all.  To cut out the fat out of the cookies, I used applesauce instead of butter.  I also used maple syrup and stevia to sweetened up the cookies, after all a cookie needs to be sweet otherwise it is boring.  For some crunch I added some honey roasted peanuts.  I just love these cookies.

A healthy, vegan granola cookie filled with peanut butter and chocolate chips. Makes for a perfect snack and goes nicely in lunches.
Serves: 16 Cookies
Ingredients
  • ½ cup apple sauce, unsweetened
  • ¼ cup peanut butter
  • 2 tbsp. maple syrup
  • 1 tsp. stevia (2 pkts)
  • ½ tsp. vanilla extract
  • ½ tsp. salt
  • 2 tbsp. almondflour
  • 1 cup old fashion oats(I used gluten free)
  • 2 tbsp. honey roasted peanuts, chopped small
  • ¼ cup mini semisweet chocolate chips
Instructions
  1. Preheat oven to 350°
  2. Line a baking sheet with parchment paper
  3. In a medium bowl; add applesauce, peanut butter, maple syrup, stevia, vanilla extract, and salt; mix well. Stir in almond flour, oats, peanuts and chocolate chips; mix until everything is incorporated.
  4. The batter will be wet, with a cookie scoop, scoop a heaping 2 tablespoon size of batter onto prepared cookie sheet. Since the cookies won't rise you can place them close together, about an inch apart.
  5. Bake for 10 - 13 minutes until the cookies are slightly golden. Let them slightly harden on cookie sheet and place on a cookie rack to cool.

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol
🎃
There are two methods that I have used in the past; the chlorine bath and the dish soap bath. This is what I have learned.
🎃
My favorite and only way I wash pumpkins now is using dish soap. It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.
🎃
The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.
🎃
The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.
🎃
Did you get your pumpkins yet?
.
PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

Hi, it’s me Samuel!! I am taking over mamas page Hi, it’s me Samuel!! I am taking over mamas page today because I got the best gift in the whole world and it even came in the mail on my birthday. How did @downlitebedding know? They are so good!
🐾
Downlite Bedding sent me the EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter. Isn’t it beautiful? It’s so soft, cozy, hypoallergenic and it makes me so happy.
🐾
The comforter is 400 thread count, it has moisture wicking and cooling technology to help regulate body temperature, which is perfect since I get warm in the summer with all my hair and I like to be cool when I’m sleeping. A big plus is the comforter is white, I hide very well in it. It’s hard to see me. So mama can’t catch me on her bed.
🐾
The EnviroLoft® Down Alternative PrimaCool™ Cooling Comforter also has a Scotchguard stain release fabric and machine wash and dry. It’s truly an amazing comforter.

Mama let me do this takeover today because she knows that I love @downlitebedding as much as she does. She said she has never seen me get so excited as I do when we get Downlite Bedding and pillows in the mail. How can I not get excited? It’s like sleeping on a cloud!
🐾
Downlite Bedding was kind enough to give us a 20% discount: DYGEN20
🐾
Have a great day and happy napping!

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.
🌼
I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!
🌼
I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol
🌼
How your garden growing? I lost all my potted plants from the heat. 😩

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long.

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

@bzaar_wholesale has amazing products for your home, great pricing and global shipping. The link is in my bio.

Do you like making charcuterie boards? What do you add to yours?

Hello, hello! It may be 100 degrees outside, but I Hello, hello! It may be 100 degrees outside, but I can’t resist putting out some Fall. Especially when you get new decor from @12timbers. You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.
🍂
Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.
🍂
I just adore the wooden cut out pumpkins from @12Timbers. When I look at them they make me smile. The orange wooden leaf is the perfect piece to bring everything together. This gets me so excited for Fall decorating. Now to finish the rest of the living room.
🍂
12 Timbers is so kind to give me a discount code. It’s good until Saturday at midnight. The code is PBANDP15.
🍂
Have the most beautiful day!

Look at this friends! It’s my first Fall vignett Look at this friends! It’s my first Fall vignette. Notice anything that seems a tad early? It’s my first pumpkin from my garden. Can you believe it? They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. That makes me sad, but at least I have more pumpkins growing.
🎃
I really had fun bringing out some Fall decor. Fall is not my favorite season, as I love Spring and Summer, but Fall is my favorite to decorate for.
🎃
I wanted to share with you my new reversible blocks from @krumpetshomedecor. Aren’t they cute. They would look so pretty on a shelf. The one side says Fall and the other side says Boo! The two wooden pumpkins are also from Krumpets Home Decor.
🎃
The Fall blocks are the Krumpets Home Decor deal of the week. Plus you get an additional 10% off with code: PBANDP. Link in my bio.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.
🍋
This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
🍋
What is your favorite summer drink? Have a wonderful day!
