A healthy, vegan granola cookie filled with peanut butter and chocolate chips. Makes for a perfect snack and goes nicely in lunches.
Serves: 16 Cookies
Ingredients
½ cup apple sauce, unsweetened
¼ cup peanut butter
2 tbsp. maple syrup
1 tsp. stevia (2 pkts)
½ tsp. vanilla extract
½ tsp. salt
2 tbsp. almondflour
1 cup old fashion oats(I used gluten free)
2 tbsp. honey roasted peanuts, chopped small
¼ cup mini semisweet chocolate chips
Instructions
Preheat oven to 350°
Line a baking sheet with parchment paper
In a medium bowl; add applesauce, peanut butter, maple syrup, stevia, vanilla extract, and salt; mix well. Stir in almond flour, oats, peanuts and chocolate chips; mix until everything is incorporated.
The batter will be wet, with a cookie scoop, scoop a heaping 2 tablespoon size of batter onto prepared cookie sheet. Since the cookies won't rise you can place them close together, about an inch apart.
Bake for 10 - 13 minutes until the cookies are slightly golden. Let them slightly harden on cookie sheet and place on a cookie rack to cool.
