Hi Everyone,
Today I have to make a quick post. On Friday I have a BBQ at work so I won’t be home late, and tonight, which is Thursday, I have to make my dishes. I’m making my Jalapeno Cilantro Hummus,which is a huge hit with everyone, even those who don’t like hummus love this dip. So I am making that and my Cucumber and Tomato Summer Salad. I figured I would bring healthy dishes so I can munch on this and not high calorie dips and snacks. Hope my plan works out?! Crossing fingers!! Today’s recipe is one I came by, by accident. When I was making my Lave Flow Smoothie, I made it too thick and I realized that it tasted awesome and would make an excellent soft serve ice cream.
This ice cream is my Pina Banana Soft Serve Ice Cream. It’s creamy, sweet and tastes of the tropics. It’s made with simple ingredients, like banana, pineapple, coconut milk and stevia. It’s so refreshing and so perfect for the summer. Not to mention it is healthy, guilt-free and even vegan. I love when you cook or in my case make smoothies and then you discover another recipe while making another dish.
For a little added umph, I topped my soft serve with some unsweetened shredded coconut and of course a cherry. It was a filling and wonderful little dessert. You could so eat this all yourself, like I did, but if you’re looking for just a little bit you can certainly split it with someone. The recipe makes 2 cups of pure yumminess!!
- 1 large banana, frozen
- ½ cup pineapple, frozen
- ½ cup coconut milk, unsweetened from carton
- ¼ tsp. coconut extract
- ¼ tsp. stevia
- ½ cup ice
- Place all the ingredients in a blender and process until smooth.
- Optional toppings: shredded coconut and cherry
I am loving this dessert! I am on such an ice cream kick and this is fabulous to satisfy your craving without all the unnecessary ingredients! Now for this weeks weekly recap.
Sunday: Peach Tart – I love this tart and so did my Husband! He ate 3/4’s of it and I ate the other 1/4. It’s refreshing and so perfect to use those wonderful fresh peaches that are now in season. I don’t buy peaches that much, but when I do, I remember how much I truly love them! I need to stock up more. I’m hoping today to go to the Farmers Market and get some more.
Monday: Lava Flow Smoothie – This is another tropical treat! I love this smoothie, it’s one of my favorites. I wish so bad I could have a real one from Hawaii. One day, I’ll get there and when I do, I’ll be having one of these drinks, hopefully while sitting on the beach! 🙂
Tuesday: Avocado Chocolate Balls – I have been nibbling on these little balls all week! They satisfy your chocolate craving and you get a little hint of avocado in it too! It’s amazing of all the fun things you can make with avocado. These balls are one of my number one pinned recipes this week!
Wednesday: Peanut Butter and Jelly Tart – This is my recipe that is on the Smart Balance Battle of the Bloggers. I’m not doing to great in the contest, it really comes down to popularity, I think? That’s one thing I don’t like about voting contests. If you have a bazillion readers, then your going to get more votes. Oh well, honestly I am happy to be chosen to be in the contest and I want to thank you for your votes! It’s so much appreciated to have your support. So a big thank you to you! If it wasn’t for you, I wouldn’t even be in it!
Thursday: Apricot Scones – I like this little scones and the combination of orange and apricot go simply wonderful together. I like that they are mini, but you can always make them bigger! 🙂
Friday: Cherry Lime Soda – This is a drink my Husband and I have been drinking all week. It’s light, refreshing and guilt-free. We both really love it and I can’t wait to try this type of recipe with other good for you fruit juice. My Husband says it almost tastes like cherry crush! I think it just tastes good and it’s so much better than soda!
Well my Friends, I need to get going. I talked more than I had planned! 🙂

What a fun idea for a healthy ‘ice cream’! I’ve done the pureed banana before with chocolate and peanut butter and loved it, but this is definitely a version I need to try!
