Polynesian Salad – #SundaySupper

Hi Everyone, Today I have for you a salad that I had at the Grand Lux Cafe in Las Vegas.  I just fell in love with this salad and I had to re-create it at home!  The only problem was I never got to taste the dressing at the restaurant because the waitress brought me balsamic and this is supposed to come with a pineapple apricot dressing.  But I am pretty happy with my dressing that I made for the salad.

Polynesian Salad

The salad is light with a wonderful tropical flair!  It’s filled with mango, jicama, cucumber, red onions, snap peas, sweet bell pepper, chicken and served on a bed of mixed greens and cabbage.  Look at the pretty colors!

Polynesian Salad

The dressing is light, sweet and a little savory.  I made it using fresh pineapple, freshly squeezed orange juice, garlic, dijon mustard and rice vinegar.  I placed all of the ingredients in a blender and out came this wonderful little dressing that doesn’t contain oil.  After my trip I need to cut back on the fat wherever I can!  Even though olive oil is a healthy oil!!

I love that this week with Sunday Supper that we had to make skinny dishes!  You know this topic is right up my alley!!!  I really debated on what to make, and all I could think about was this salad.  I think this time of year we could use a light, tropical dish!!  I am so ready for spring!

A sweet, light tropical salad made with chicken, mangoes, snap peas and served on a bed of mixed greens and cabbage, topped with a sweet and savory pineapple vinaigrette.
Serves: 2 Big Plates
Ingredients
  • 8 oz chicken, skinless, boneless,cooked, diced
  • 4 cups mixed salad greens
  • 2 cups cabbage, shredded
  • ⅔ cup sweet bell pepper, diced
  • 4 tbsp. red onion, diced
  • ⅔ cup jicama, peeled, diced
  • ⅔ cup snap peas, diced
  • ⅔ cup mango, peeled, diced
  • ⅔ cup cucumber, diced
  • Dressing:
  • ¼ freshly squeezed orange juice
  • ¼ cup pineapple
  • ¼ cup rice vinegar
  • 1 tsp. garlic. minced
  • 1 tsp. dijon mustard
Instructions
  1. In a blender add all the ingredients for the dressing and process until smooth.
  2. One two plates; divide all of the salad ingredients and top with dressing.

Polynesian Salad

Wow, just after I looked at the nutritional stats, I can’t believe all of the fiber and protein in this salad!  What a great and healthy salad!!   So glad I decided to re-create this one!!  I know I’ll be placing this salad on my weekly rotations!  This salad will be perfect for lunches this week!     This is SO pretty…and how refreshing! I have some fabulous cranberry-pear white balsamic and blood orange olive oil that I picked up last weekend…this salad would be great for pairing with a vinaigrette made with that combo!

    Bummer that you got the wrong dressing at the restaurant. Sounds like you were able to create something really yummy none the less. I just curated this on the Entertaining sub-channel on Bliss.com. I know it’s something I would make for guests, served some Hawaiin sweet roll. Yum! Thanks for a great recipe.

Happy Wednesday! I have had a lot of DM’s recent Happy Wednesday! I have had a lot of DM’s recently asking if Woody, the woodpecker is still going to his nesting box every night. Yes he is! I watch for him everyday. He comes at dusk. I can tell the days are getting longer. He used to come at 4:20 and now it’s 5:52pm. Yes I check the clock. I’m weird that way. So Woody has been with us since January 8th. My husband and I sit outside on the weekends together waiting for him to go to bed. Is this what happens when you get older?

I updated my bench for Spring. I’m really loving yellow. I’m glad I went with that color for Spring. The yellow goes perfect with my new reversible spring pillow that I got from @krumpetshomedecor. The pillow has the most adorable black pom poms on it and where the flower is it has a secret pocket. I love the secret pocket.

The pillow would be so cute to give as a gift. You could put a card in the secret pocket. The other side of the pillow is black with white polka dots with an egg on it that says “be happy”. So adorable.

Hello Tuesday! We’ve had some nice weather this Hello Tuesday!  We’ve had some nice weather this week. It must have hit 70 yesterday. I’ll enjoy it while I can. Next week it’s supposed to back in the 50’s with chance of rain. Well at least I won’t have to worry about watering my garden.

I’m sharing with you one of my Easter tablescapes. I wanted to go simple. I feel when there’s too much on the table, you have a hard time seeing the people across from you. Plus my table is only 5’ long, so I don’t have a lot of space.

I’m loving the blues and greens. It’s such a pretty color for Spring. I had a whole blue tablescape idea in my mind, but I’m having problems finding pieces that I like. I sure miss Pier1. That was my go to place for table setting decor.

Hi all! This is Sammy here! I just have to tell you my Mom now has no excuse not to have bones in the house anymore. This beautiful container hold 5 boxes of my favorite Trader Joe’s bones. My Mom also needs to know that carrots, celery or a piece of lettuce doesn’t cut it! Bones is what I must have!

The container is made of a nice heavy coated carbon steel and holds 12lbs or 54 cups of dog food and bones. 🤩Yes thank you! That is what I’m taking about. The only thing is, the lid is so well fitted and airtight that I can’t get my paws in it. What’s up with that? Not fair! I need access to bones at all times.

My Mom loves the container too because it looks pretty on her counter and even comes with a sticker that she can write my name on. I absolutely love this container! Thank you Outshine Co. for sending this to me, I mean my Mom.

Now that Valentines is over, it’s officially time for spring, at least in my mind. The weather may say otherwise, but I’ve been craving spring colors in my home. I went pretty neutral in my living room for winter, but I think I’m going to add some pastels. Now what color to add?

Last year if you followed me, I spent months trying to decide on what color to use. Ugh, I think I’m in the same boat again this year. I like yellows because it’s a happy color, but I also like pinks and blues. Oh the decisions.

I haven’t seem to much inspiration in the stores, though Target seems to have yellows and corals, plus a lot of neutrals. I’m seeing a lot of boho and woods. I do like woods with greenery.

Happy Friday! We did it! Yesterday was a little bi Happy Friday! We did it! Yesterday was a little bit of rough day in my house. Woke up to see my sweet Sampson wasn’t feeling well.  He was just laying around, didn’t get up to greet me, and the biggest sign was he didn’t ask for a bone. You know how he’s obsessed with bones.

Around 9am he perked up and asked for a bone and wanted to go outside to snoop around. He seems to be better, but is still kind of laying around. I just hope he will be okay. He’s 11, and I get so worried. He’s my child.

I’m sharing with you my pretty tulips from Trader Joe’s. They have such a great selection of tulips in array of colors. Though I didn’t see any roses, which is strange. We do not have any plans for the weekend, that I know of, but we have the tendency to wing it.  I’ll keep you posted. Hope you have a wonderful Valentines weekend!
