Hi Everyone, Today I have for you a salad that I had at the Grand Lux Cafe in Las Vegas. I just fell in love with this salad and I had to re-create it at home! The only problem was I never got to taste the dressing at the restaurant because the waitress brought me balsamic and this is supposed to come with a pineapple apricot dressing. But I am pretty happy with my dressing that I made for the salad.
The salad is light with a wonderful tropical flair! It’s filled with mango, jicama, cucumber, red onions, snap peas, sweet bell pepper, chicken and served on a bed of mixed greens and cabbage. Look at the pretty colors!
The dressing is light, sweet and a little savory. I made it using fresh pineapple, freshly squeezed orange juice, garlic, dijon mustard and rice vinegar. I placed all of the ingredients in a blender and out came this wonderful little dressing that doesn’t contain oil. After my trip I need to cut back on the fat wherever I can! Even though olive oil is a healthy oil!!
I love that this week with Sunday Supper that we had to make skinny dishes! You know this topic is right up my alley!!! I really debated on what to make, and all I could think about was this salad. I think this time of year we could use a light, tropical dish!! I am so ready for spring!
- 8 oz chicken, skinless, boneless,cooked, diced
- 4 cups mixed salad greens
- 2 cups cabbage, shredded
- ⅔ cup sweet bell pepper, diced
- 4 tbsp. red onion, diced
- ⅔ cup jicama, peeled, diced
- ⅔ cup snap peas, diced
- ⅔ cup mango, peeled, diced
- ⅔ cup cucumber, diced
- Dressing:
- ¼ freshly squeezed orange juice
- ¼ cup pineapple
- ¼ cup rice vinegar
- 1 tsp. garlic. minced
- 1 tsp. dijon mustard
- In a blender add all the ingredients for the dressing and process until smooth.
- One two plates; divide all of the salad ingredients and top with dressing.
Wow, just after I looked at the nutritional stats, I can’t believe all of the fiber and protein in this salad! What a great and healthy salad!! So glad I decided to re-create this one!! I know I’ll be placing this salad on my weekly rotations! This salad will be perfect for lunches this week! Make sure you check out what everyone else is serving at the Sunday Supper! This is SO pretty…and how refreshing! I have some fabulous cranberry-pear white balsamic and blood orange olive oil that I picked up last weekend…this salad would be great for pairing with a vinaigrette made with that combo!
