I was going to wait to share this recipe with you, but it is way to good not to share now!! Dailybuzz was asking for tastemakers to try McCormick’s Recipe Inspirations, and one of the recipes was for Garlic Lime Chicken Fajitas. One thing I love is chicken fajitas! I could so eat them everyday! I’m not kidding about that! Just ask my Husband!! The combination of peppers and onions with seasoned chicken is pure foodie heaven to my palate! As soon as I saw what the recipe was, I just had to try it!!! Let me tell you, I am so glad I did!!
These Fajitas tasted like it they were from a restaurant! The flavor of garlic and lime were not over whelming at all, but you could definitely taste them. The added spices were a perfect combination. This is one little packet I will be buying again!
This dish is very easy to make!! All you do is marinate your chicken for 30 minutes or longer, cook the chicken with the marinade. Cook up your onions and peppers, mix the chicken and vegetable combination together and dinner is served!! Besides marinating the chicken, the whole meal took about 12 minutes to make!! Talk about a fast week night dinner!!!
To be honest, my Husband is not a chicken fajita fan, not because of the onions and peppers, but because it’s chicken. He believes that tacos should just be ground beef. I disagree with him, big time!! But he had this for dinner tonight and he loved it!! He ate 3 fat tacos!! You know my normal question to him, “would you eat this again?” He said definitely!! Yah!!
I gave one of my sample packets to my friend at work, and she had her fajitas for dinner last night. She said she didn’t have the juice, so she used canned tomatoes and she said it tasted fantastic!!! I think that was a great idea and a great substitution. She was going to bring me a sample, but her Husband said no, that he wanted the leftovers for his dinner!!! I think another great idea would be to use this seasoning with shrimp!! Oh my gosh that would taste wonderful. I can only imagine marinating the shrimp in the seasoning and then grilling it, and brushing the remaining marinade on it!! Oh, man, I guess I know what I’m going to do next!! Note to self, buy shrimp.
- 1 packet of McCormick Garlic and Lime Seasonings
- ¼ cup lime juice
- ¼ cup orange juice
- 2 tbsp. olive oil
- 1.20 lbs of chicken, sliced into strips
- 1 large sweet pepper, cut into strips
- ½ medium onion, cut into strips
- 8 flour tortilla (8 inch)
- Mix juices, oil and all of the spices and salt in a small bowl. Reserve ¼ cup marinade. Place chicken in a large resealable bag or glass dish. Add remaining marinade, turn to coat, well. Refrigerate for 30 minutes or longer for extra flavor.
- Cook and stir chicken in a large heated skillet on medium - high heat for 3 minutes or until lightly browned. Remove from skillet. Add bell pepper, onion and reserved marinade; cook and stir for 5 minutes or until tender. Return chicken to skillet.. Cook for 2 -3 minutes or until heated through.
- Spoon chicken mixture into warmed tortilla. Serve with assorted toppings if desired.
You have to try this seasoning! I am really impressed with it! I would never of thought to use a seasoning packet for my fajitas, but it was perfect! Everything you needed is in there, and the best part is, the spices are fresh, you can smell them when you open up the individual little pockets.
I thought it would be fun to show you my messy fajitas! I see a lot of people blog such gorgeous meals and treats, that look so delectable you just want to reach through your computer screen and grab it, but you never really see what they look like when their at the table eating. I’m human and I’m not afraid to show my true self!! I doctored up my fajitas with lettuce, tomatoes, jalapenos, hot sauce and greek yogurt!! I love it messy!!!
Yum!!! Since it was just my Husband and I for dinner, I have leftovers! I’m going to make a chicken fajita salad for lunch tomorrow!! I can not wait!!! Sorry for all the enthusiasm, I get so excited when I try new things and I love them!!! You know me and food!

We are serious fajita lovers at my house too. I never thought to use the leftovers on a salad though. I love it!

YUM! My husband and I could eat fajitas pretty much daily too – and whenever I’m at a restaurant and someone near me has ordered them I’m jealous and wish I had some too!! These look great!
