Man vs Woman – Mashed Potatoes

September 26, 2012 By Jennifer @ PB and P Design 18 Comments

Hello and Happy Wednesday!

Today I have for you another episode of Man vs Woman, Potato Style!!

If you have been reading my blog for a while, you will know that my Husband hates Sweet Potatoes, but I LOVE them!  So I always try to make dishes where I can incorporate both of them.  Now normally I wouldn’t make two separate mashed potato dishes, but I have the quickest easiest recipe for you!  You can have mashed potatoes in like 5 minutes!!  Talk about super fast!!  Who ever heard of mashed potatoes in 5 minutes?  I know what your thinking, I used instant potatoes.  Nope, I used a real potato!  Can you guess how I got these spuds so creamy?

Ready for this one?  I microwaved them!  I washed the potatoes, dried them off with a paper towel, poked a few holes in them, wrapped them back in the paper towel that I used to dry them with and placed them in the microwave and cooked them in two-minute increments, and cooked until tender.  Depending on the size of the potato it took about 3 minutes for the sweet potato and about 5 minutes for the white potato.  I let the potatoes cool for a minute, and then peel the skin.  The skin comes right off.  Then I placed the potato in a bowl and with my hand mixer, I beat them, while adding milk and spices.  Oh my gosh talk about easy and delicious!!  I love them!!!

For my Husbands mashed potatoes I used non-fat milk, salt, pepper and butter.  It’s his favorite way of having them, with the addition of gravy!  These potatoes are super duper creamy!!  For the milk, you need to add it little by little to get the consistency you want.  I think my Husband will be pleased with his potatoes.

A creamy, traditional mashed potato made in minutes in the microwave.
Serves: 2 Cups
Ingredients
  • 8 oz rustic potato
  • ¼ cup non-fat milk
  • ¼ tsp. salt
  • ¼ tsp. ground pepper
  • 1 pat butter
Instructions
  1. Scrub potato, dry with a paper towel and prick several times with a fork. Wrap potato back in the same paper towel that you used to dry it with and place in the microwave. Cook potato on high heat for about 2 minutes and then flip the potato and cook for another 1 - 2 minutes. Cook potato until is is softened.
  2. Let potato cool, until it's cool enough to handle. Carefully peel the skin away or cut down the center and scoop flesh out with a spoon. You can keep the skin on it you prefer.
  3. Place the potato in a bowl, and with a hand mixer beat the potato to break it up; add milk, butter and seasoning and beat until creamy. You may need to add more milk to get the consistency you want.

My sweet, sweet, sweet potatoes are simply sweet!!  Sorry I can’t say sweet enough!  I really loved them.  These were probably the best mashed sweet potatoes I have ever had, not that I have had to many mashed ones.  These potatoes were made with coconut milk, honey, salt, pepper, a pinch of cayenne pepper and cinnamon.  Oh my gosh!  They almost taste like dessert!  I chose not to add any butter to the recipe because I didn’t think they needed it at all.  The coconut milk was a perfect addition to the potatoes.  Talk about creamy!!!  One piece of advice, if you decide to make a sweet and white potatoes, be sure to make your white potatoes first.  Heaven forbid if the orange gets in the white.  🙂

I hope you like today’s edition of Man vs Woman.  If you’re a mashed potato fan, you really need to try this!  There so good!  I asked my Husband what he thought of them, and he asked why?  Did you hide beans or yogurt in it?  I told him nope!  I told him I made them in the microwave and he told me he had no clue by looking at it or tasting it!!  Kudos for me!  This is really a nice side dish to make if your just making this for one or two people.  Nothing worse than spending 30 – 45 minutes to make mashed potatoes!  I think that is why I rarely ever make them except at holidays.

Well my Friends, I have been falling behind on things, so it’s time for me to get rolling.

Have a great day!!

Toodles,

Jennifer

I thought this was pretty clever. I always have to find easy ways to incorporate or should I say separate the foods we like. This recipe worked out perfect for us!

I’m new here. (Found you on Pinterest) These are AMAZING!! I am a huge sweet potato fan, but they take so long to cook. This way is great. I used almond milk because I didn’t have coconut, and they taste awesome!

I often add a sweet potato diced in place of white potato in soups, stews. really good in veggie soup or chicken noodle soup. bumps up the goodness! even hubby will eat them that way.

☕️hello, hello! I’m sharing with you my Chin ☕️hello, hello! I’m sharing with you my China that my Mom gave me. As a child I always loved this set. My Mom got these by saving the stamps you would get from the grocery store with purchase. Each piece of China had a stamp value. So once you collected enough stamps you could pick up another piece of the collection. Needless to say, my Mom collected a lot of stamps and I have the whole set to serve 12 people.☕️

Happy Thursday! I changed up my dining room a lit Happy Thursday! I changed up my dining room a little bit. I took out my Easter decor and gave it a more neutral look and did some switching around. Plus I added a Samantha Sue, who is laying down in the photo. lol
🍓
One of my favorite pieces that I added was my new @krumpetshomedecor sign. I love the style of the sign with the shiplap white wash look and of course the cute strawberry and daisies that add a pretty pop of color.

The sign is also reversible. It also says Life is Sweet on the other side without the strawberries and daises. The sign is the Krumpets Home Decor deal of the week.

Hello and happy Wednesday! Thank you for all your Hello and happy Wednesday! Thank you for all your kind words about the dentist. All he had to do is cement my crown back on. It’s that time of year for house plant care. While your plants are waking from dormancy, it’s time to feed them, repot them if needed and give a trim if applicable.
🌿
I also water my plants about every 7-10 days, depending on the plant. My coffee plant, fern, violet and my mixed plant container needs watering more. The key to know when to water is check the soil. I use a water meter probe and you just stick it in the dirt. If it’s dry, I water. If it’s moist or wet, I’ll check again in a few days. You can get a water meter at Lowe’s, your local nursery or Amazon. It’s my number 1 garden tool. We use it on outside plants too.
🌿
I’m also sharing with you my cute little tea towel that I got from @e.h.designco. Her shop is closed right now because she’s moving, but will be open back in June.
🌿
Okay, go check your plants!

Today I am sharing with you my new plates and bowls that I got from @sonemone_official. I just love them. The shade of blue is so pretty and I love the vibrant colors on them.

The bowls are huge and would make a wonderful soup bowl or salad bowl. The plates would be beautiful served with a charcuterie board. They are microwave and dishwasher safe. They would be so pretty on a summer tablescape.

I wanted to get one last Easter tiered tray in before Sunday. Everything you see here is from small shops. I tagged all of them in the photo.
💕
This weekend I’ll be taking a break from IG to work in the yard and to do some decorating so I have some new content to share with you. Though with Easter almost behind us, I’m unsure what I’ll do next? But I do think I’ll stick with the yellows? But we’ll see.

I’m sharing with you my top 4 photos of March. You guys picked some good ones. The first photo of the Easter tablescape is my favorite tablescape I’ve done.

Hey, hey, hey! Happy Wednesday! Well I crammed 23 Hey, hey, hey! Happy Wednesday! Well I crammed 23 bunnies into this picture, if you count the bunnies on the pillow. Can you find them all?
🐰
This is probably my favorite spot to decorate. About a year or so ago, I had no idea what to do in this area. I struggled so much. It’s just an odd space. Then I bought the white bench and it instantly became so much fun to decorate.
🐰
I loved the bench so much, I bought a second one to go under the other window. That bench holds my plants. I have other awkward spaces in my home that I would love to add a bench, but my husband would kill me if I got another. I can overdo things when I like something. Like bunnies and pumpkins. lol

Happy Tuesday! I’m back with another bunny vigne Happy Tuesday! I’m back with another bunny vignette. I told you that I’m trying to squeeze them all in.
🐰
Let me tell you, I must have taken a bazillion photos of this vignette. I moved it all over my house. I have the worse time photographing greens and yellows together. I have the same issue with sunflowers too.
🐰
I was inspired by this vignette by the cute little Fresh Dyed Eggs sign from my friend Brantley @thesassyoak. I love the little sign so much. She makes the cutest little signs.
🐰
I had fun putting together the shallow pot with moss and the birds nest. I added my little daffodils to it to look like they are popping out of the pot.
🐰
Is there something you try to photograph that gives you a hard time?

Happy Monday!! I can’t believe next weekend is E Happy Monday!! I can’t believe next weekend is Easter, so you know what that means? I need to get in as many bunny pictures as I possibly can.
🐰
Who am I kidding? You’ll probably get a lot more bunnies in the coming weeks. In all actuality, I keep most of my bunny decor up all year, unless it screams Easter.
🐰
This weekend was a busy one for me. The first real warm weekend we’ve had all year, so I spent a lot of time working the garden. I’m actually kind of sore, which is a good thing. Nothing like the sun shining, warm air and playing in the dirt. My favorite thing.
