Almond Butter

Hello,

Can you believe it’s Sunday already?  I was planning on making cookies on Saturday, but I ended up cleaning my kitchen which took hours.  I removed a wine rack we have, and disposed the wine down the sink.  The corks were dry and falling apart.  My kitchen smells like a wine cellar, which I don’t mind!  😉  So needless to say I didn’t make any cookies, but most definitely will today.

I thought I would share with you one of my favorite nut butter recipes.  Cinnamon Almond Butter.  I made this last week, and I forget how good it tastes, until I took that first spoonful.  This nut butter will go well with holiday baking!  You must make this!

This is so creamy and the cinnamon and maple syrup really bring the flavors together in this Almond Nut Butter!  I just love it, matter in fact I’m going to have some now with my yogurt!  Best dessert!!


Want to know a discovery I had?  I always buy my nuts in the 2lb. tubs from Target for $11.99, not bad huh?  Well, if you go to there Christmas section they have them there as gifts in a decorated 2lbs. tub for $9.99.  Crazy huh?  I need to stock up, just be sure to save some for me!

Cinnamon Almond Nut Butter

2 cups of whole almonds

1 tbsp of Maple Syrup

2 tsp of Granulated Sugar

1/2 tbsp of Cinnamon

1 tsp of Vanilla Extract

1/4 tsp Canola Oil (optional)

Directions:

Preheat oven to 300

In a large bowl, add your almonds and maple syrup.  Mix until all the almonds are coated, place on baking sheet.  Bake for 15 minutes.

Set almonds aside until cool.  Just a few minutes.

In food processor add almonds and process until you see it form into a ball.  NOTE:  You will have to scrape down the sides a few times, like 10.  Add your remaining ingredients and then process until drippy.  The whole process takes about 10 – 15 minutes.

If the nut butter seems to thick, process it with a 1/4 tsp of canola oil, and then process until it’s the consistency you like.  Just be careful that it doesn’t get to oily.  Personally I’d rather have it thicker then to much oil.

Store in cupboard or refrigerator for longer life on nut butter.

Enjoy!

Serving Size: 20 Tbsp.

Calories per Tbsp.:  90,  Fat:  7.6,  Potassium:  107,  Sodium:  .3,  Carbs:  3.8,  Fiber:  1.8,  Sugar:  1.5,  Protein:  3.1

I just love this Almond Butter and it’s way cheaper to make then to buy!!!  Hope you try it and if you do tell me what you think!

Well I’m off, I am going to try to make cookies so I can post them for ya!  What are your favorite kind of cookies?  On Facebook I was told to make Cowboy Cookies.  Have you ever had them?  I never did, but they sound great, chocolate, oats, coconut  and dried fruit, I’m thinking cherries!  Have a great day!!!

    So far I haven’t had the greatest success with nut butters, but yours sounds like it’s more up my alley. I bet it would be great in oatmeal or on pancakes too.

      Hi Rhoda,

      You should try it again. You just need patience. It seems like forever till it gets to the consitency you like, but it’s so worth it. If I can make it, you certainly can! Oh, on pancakes? Hmmm, never thought of that, I am betting your right, I need to try that!

    You mentioned getting your nuts from Target in the 2 lb tubs. For this almond butter do you use roasted almonds? I’m gonna try this

      Hi Nina,

      I use raw almonds, then coat them in maple syrup and roast them in the oven. If you already have or plan on buying roasted almonds then I would skip the roasting part and just add about a tablespoon of maple syrup to the nut butter when your making it. Have fun making it! And yes, I always buy my nuts at Target. I think right now they are between $9.99 and $12.99 for 2 lbs.

Look at this river of pink! Supertunia Vista Bubblegum by Proven Winners burst with flowers this week.

During July Garden tour, my petunias were looking sad, hardly any flowers. I said how disappointed I was. I followed all the Supertunia rules, spray with BT and fertilize. Then I made a little bit stronger concotion of BT Spray and a few days later, the plant rewarded me with beautiful pink blooms.

So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.

After reading reviews on a million refrigerators, they all seem like crap. I need your help! Do you have a refrigerator that you recommend?

I saw a Frigidaire one that we are debating on, but not sure? The reviews are good, but says, they were collected from a promotion. So I’m not sure how much I trust that? Anyway, any recommendations that you have would be great!

PS. Sorry mama hasn’t posted in a while. My brother Sully 🐶 who is a 2 year old Yellow Labrador has been diagnosed with Osteosarcoma (bone cancer) in March and has gone through radiation treatment and is currently doing chemo. He’s been really ill and mamas main focus has been taking care of him. She hopes to be back soon.

Happy Tuesday! I know it’s been awhile since I hav Happy Tuesday! I know it’s been awhile since I have shared anything with you. I have been busy cleaning up the yard, and my day job has been so busy. Hope you are doing well.

I have been decorating the house for Easter and Spring. I love how this little space turned out. I am loving the bright pastels. I added my new bunny/chick pillow that I got from @12timbers. It matches so perfectly and it’s so cute. I also couldn’t resist the chick pillow from Target.
