Hi and Happy Saturday! Plans for the day? Not sure yet, may do a little shopping. I have a ton of gift certificates to use, just not sure what I want. I’m sure kitchen goodies will definitely be a buy!
So for Friday nights dinner I made a Buffalo Chicken Lasagna. It was so good, but the pictures really don’t do it justice. White creamy cheese doesn’t photograph very well.
This recipe makes 4 HUGE portions, so you’ll be pleasantly happy! I added carrots and celery to the dish which I liked, but my Husband thinks I should omit the carrots next time, I’ll leave that up to you to decide. The carrots are crunchy in the dish, but I really love carrots, if your not a fan of them then I recommend omitting them from this recipe.
The first thing I did was make my sauce, which was milk, cream cheese, garlic and mozzarella cheese oh and a pinch of Franks Hot Sauce. The cheese really thickens up if you let it sit for a few minutes. This is my go to low calorie Alfredo Sauce, I just omit the hot sauce and add Parmesan Cheese to it!! It’s a great sauce!!!
The recipe is for baking in one pan, but because my husband doesn’t care for a lot of hot sauce I made these in two separate baking dishes, which makes it nice, so I can add more heat to mine and I add more cheese to his! Lasagna noodles fit beautifully in a bread pan! I just love that!! First layer is noodle, chicken, celery & carrots and cheese.
Once you add all three layers, add your cheese sauce and bake in a 350 degree oven for 30 minutes.

Buffalo Chicken Lasagna
For Cheese Sauce
1/2 Tbsp. Butter (I used Brumble and Brown)
4 oz. non-fat Cream Cheese
1 Clove of Garlic
1/4 tsp. Black Pepper
1 1/2 Cups Non-fat Milk
2 oz Mozzarella Cheese (1/2 Cup)
1 Tbsp. Franks Hot Sauce
6 Lasagna Noodles – No Boil kind
8 oz Cooked Chicken – I used a Rotisserie Chicken
1 large Carrot – minced or diced real small
1 Large Celery Stalk – minced or diced real small
3 oz of Lite Mozzarella Cheese – shredded
Directions:
Preheat oven to 350
In a sauce pan, melt butter on medium heat and then add cream cheese, garlic, pepper and milk. Stir until cheese is melted and creamy, this will be at least 5 minutes. (Fat free cheeses takes a while to melt down)
Stir in 2 oz of Mozzarella Cheese until melted and 1 Tbsp. Franks Hot Sauce
In a bowl,shred your chicken and add 2 Tbsp. of Franks Hot Sauce. or more to your liking and mix well.
Take a small baking dish and spray with non-cooking spray, then start to layer.
First layer
2 Lasagna Noodles
3 oz of Chicken
Sprinkle of Carrots and Celery
1 oz Mozzarella Cheese
Repeat Layers until all your ingredients are gone!
Add more hot sauce if you like!
Pour all of your cheese sauce over the Lasagna.
Bake in a 350 degree oven for 30 minutes.
Take out of the oven and let it sit for a few minutes.
Makes 4 HUGE servings!

I served with a side salad and more hot sauce over the top! I love my hot sauce as you may know!!
