Garlic Mashed Potatoes

We made it to Friday!!!  Woohoo!!!

Thursday morning on my way to work it was 57 degrees, on my way home 54 and rain!  It’s so cold, I actually turned the heat on.  I’m not read for this cold weather.  It just seems to early!  Last week, I wore shorts and this week, sweaters! Were suppose to have rain all weekend, so you know what that means?  Cooking, Baking and Comfort Food!  Do you have any plans for the weekend? Hows the weather where you are?

Thursday, when I came home from work I saw a package on my doorstep. It was something I ordered this week from Open Sky!  It’s a chefs dream!!

This knife is so nice, it cuts so easy!  No putting pressure down, easy to handle and to top it off it’s only mine, no one else can use it!  Our knifes get so dull in this house, it drives me bonkers!!  I wonder if Guy Fieri actually uses these knifes. He claims he came up with the design.I really love the handle, it’s so easy to grip!


So tonight for dinner, I made my easy go to dinner, Trader Joe’s stuffed Pork Tenderloin with homemade Mashed Potatoes and Balsamic Asparagus.

If you ever go to Trader Joe’s try this, you won’t be disappointed!  It’s stuffed with Feta, Spinach and Peppers!  Yum!!  My favorites!  My Husband was so happy with dinner, he said it was like Thanksgiving!

I normally don’t eat mashed potatoes, but little Jenny and my Husband LOVE them!  I like making them, but I tend to stick to Sweet Potatoes, but tonight I had my Cranberry Walnut Rolls.  I keep them in the freezer, and when I want one, I let it sit out at room temperature then throw in the oven for about 2 – 3 minutes and it tastes freshly baked!   I love them!  That was my carb with my meal tonight!  No potatoes for me, well, I did have a taste of them!!

I used some fresh Dill in it, that I got from the Farmers Market this week.  I just cut the ends and put it in a glass of water in the fridge, it seems to last a long time!  Then I trim it if the ends get brown or yellow!

Garlic Mashed Potatoes

2 Cups of Chicken Broth

2 Cups of Water

3 Large Rustic Potatoes – peeled, and diced

1/4 Cup Greek Plain Yogurt

1 tsp.Minced Garlic

2 Tbsp. Butter, I used Brumble and Brown

Few Sprigs of Fresh Dill- chopped small

Salt & Pepper to taste

Directions:

In a large pot add the water, chicken broth and potatoes.  Bring to a boil and simmer for about 20 minutes, until potatoes are tender.

Once done, drain liquid from pot, add yogurt, butter, garlic and mash with a hand mixer or potato masher until creamy.  Mix in your fresh dill and Salt & Pepper.

Serve and Enjoy!

Calories per serving:  221,  Fat:  .3,  Sodium:  21,  Potassium:  1184,  Carbs:  49,  Fiber 6.1,  Sugar:  2.2,  Protein:  7

My family absolutely love them and the fresh dill really made the flavor pop!!  Next time you make potatoes, make them in chicken or vegetable broth rather then just plain water!  Trust me, they will taste way better!  The flavor is unbelievable!

All I can say is try the potatoes!

Now for the Vegetable side, a nice Balsamic Asparagus.

This was a nice quick side dish to accompany my dinner.  Lots of flavor going on here tonight!!

Balsamic Asparagus

1 Bunch of Asparagus – Cut into 1″ pieces (Note:   Break the asparagus in half, where it breaks is the good pieces, the other end will be bitter)

1/2 Tbsp.Olive Oil – I used Garlic infused

1/2 Tbsp Balsamic Vinegar

Directions:

In a a pan, add the oil, heat it up till warm, add your balsamic vinegar and asparagus, cook for about 10 minutes.  The color will be bright green and they’ll be crisp.

Thats it!  A great option, would be to sprinkle some Parmesan Cheese on top! I would of, but I had feta in the pork!!

Serves about 3

Calories per serving:  39,  fat:  2.4,  Sodium:  2.0,  Potassium:  218, Carbs:  3.8,  Fiber:  1.7,  Protein:  1.8

This dinner took about 45 minutes to make total time, not to bad for a fancy little meal!  Healthy and delish!!

I have to tell you, I am so excited!   Stuck to my workout goal this week, and I am at 1800 burn calories!  My goal was 1700!  I’ll tell ya, my butt is sore!!  I worked out on Monday to Chris Frytegs 10lbs Extreme Workout for 20 minutes and I was still sore today, well today I did the same Extreme Workout, but it was for 40 minutes lower body.  Holy Crap, I already feel it!  I guess it means it’s working!!  Woohoo!!! Tonight, I just have to work on Abs and I’m good!  So happy, that means I can relax this weekend, without the pressure of working out!

    When I was young, garlic mashed potatoes were the only type of mashed potato I would eat 😀 Mashed potatoes were much to plain for me! I love the garlic 😀

      Thats funny because most younger folks wouldn’t care for garlic in mashed potatoes! When I was a kid, I would add hot sauce to them and lots of butter!

      The pork is located in the freezer section of TJ’s. It takes about 40 minutes to cook, but worth it!!

    Wow those potatoes sound amazing! I’d sub in veggie broth, but other than that, I love it! Especially because it uses greek yogurt 🙂 YUM!

I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.

I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

Happy Monday! I want to thank those who have reach Happy Monday! I want to thank those who have reached out to me asking if I am okay. I am doing just fine. I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.

I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!

I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long. 

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.

Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.

Look at this friends! It’s my first Fall vignett Look at this friends! It’s my first Fall vignette. Notice anything that seems a tad early? It’s my first pumpkin from my garden. Can you believe it? They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.

This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?

It’s hard to imagine Fall in a couple of months when the temps have been in the 100’s, but it will be here soon. Time to start planning!!!

How I styled my bar cart is just an idea. Once I pull out my Fall/Halloween bins you will see these pieces in other parts of my home. The black wooden witches books will go in my kitchen to go with my black and white kitchen that I do every Halloween. The witches broom will also go on my shelf in the kitchen as my boys 🐶🐶 have been eyeing it up. I need to keep it away from them.

The beautiful reversible art work will go in my living room, as I like to do oranges and neutrals for fall. The 3 wooden pumpkins will go on my console table. I have it all planned out in my head. I’m kind of excited, but I will enjoy summer a little while longer.

I had a lot of Zinnias self seed which makes me so happy because the ones I bought this year are yellow, which is not what I wanted, but the ones that self seeded are pink and orange. Woohoo! I’ll have to share what the garden looks today later.

The Alyssum (white flowers on ground) all self seeded. It was looking bad earlier this spring so I pulled it all out. To my surprise it popped up all over my garden. The only problem is, it covered my stepping stones. So I can’t get in the garden without stepping on them.

If you swipe the photo you will see my last picture I took of my Hollyhock. It was so fun to see how big it would get. Unfortunately the flowers faded and it got rust. So I cut it down to the ground. I’ll pull it up this weekend.  I just hope it doesn’t self seed. It is too big for my garden and it’s pretty messy when the flowers and leaves drop.

We are supposed to be in the 100’s this week, so hoping everything survives. My potted plants do not look good. I will have make new pots. I don’t mind that. lol
