Hi Everyone,

This year the Super Bowl will be held in Santa Clara, CA which is just a short drive from where I live.  As you can imagine it is a huge deal for us!  So today I am celebrating the Super Bowl with a healthy Mocktail.  One of my all time favorite fruit combinations is Pineapple and Coconuts.  It’s so light, refreshing and reminds me of summer.  Even though we are in the middle of winter, you can always dream away to summer and drink this smoothie all year round.  I am sharing with you my Mock Pina Colada Smoothie.

This smoothie is made with 100% DOLE® Canned Pineapple Juice (aka the “King of Juices™”), coconut greek yogurt, rum extract and of course a topping of whip cream, and a cherry.  This drink is very light, refreshing and tastes just like the famous cocktail; Pina Colada.  The only difference is, anyone can have it, it’s healthy, full of vitamins and nutrients and low-calorie.

A light, refreshing, smoothie with the taste of sweet pineapple and coconut. It's the perfect healthy substitute to a Pina Colada Cocktail

Serves: 3 cups (2 servings)

Ingredients

• ¾ cups 100% DOLE® Canned Pineapple Juice
• 10.6oz. Coconut Creek Yogurt
• ¼ tsp. Rum Extract
• 2 cups Ice Cubes
• dollop of whip cream (optional)
• 2 Maraschino Cherries (optional)

Instructions

1. In a blender, add all of the ingredients and process until smooth. Pour into two glasses and top with a dollop of whip cream and a cherry.
2. Serve right away.
