Hi Everyone!
Welcome to another Smoothie Monday! Today’s smoothie is the perfect summertime smoothie! It’s light, creamy, refreshing and I have to admit one of my favorites! It’s my Strawberry Mango Smoothie!
This smoothie has the perfect balance of strawberries and mango with a hint of coconut. It just screams summer!! It’s also low-calorie, vegan and gluten-free! Yeah!! I made this smoothie using frozen strawberries, frozen mango and unsweetened coconut milk with just a few drops of coconut extract. It’s so easy! Also if you want a nice tropical evening drink, I highly recommend adding some coconut rum or a light rum in it for an extra kick. You could even add tequila and make it margarita style. Oh yeah! Now that I am writing this and thinking about it, I think I shall make that tonight!!
- 1 cup strawberries, frozen
- ½ cup mango, frozen
- 1 cup coconut milk, unsweetened, from carton
- ¼ tsp. coconut extract
- Add all ingredients in a blender and process until smooth.
Well that’s it for me. I will be away for a couple of days for a work, so I better get moving on more recipes! Stay tuned tomorrow for a great summertime potato recipe!
