Grilled Asparagus and Green Beans

Hi Everyone,

Today I debated about sharing my recipe with you.  Sometimes I’m not sure what my readers want to see, I personally believe in a variety of different recipes because that’s what I like.  So why didn’t I want to share my recipe with you?  It’s nothing fancy, it’s just a simple side dish and I thought hmm, I don’t know?  Then the next day, I had it cold for lunch and I couldn’t believe how good it tasted.  I think the first night, I was just cranky.  You ever get in one of those crank y moods and nothing seems good enough?  That was me, one day and then the next I’m all perked up and better!  So I decided, yes I must share the recipe, it’s healthy, flavorful and so good for you, plus it uses fresh summer produce.

So here is my almost never made it to my blog, Grilled Asparagus with Green Beans and Roasted Tomatoes.   As you may have seen from Instagram I have been on a major vegetable kick and after receiving  fresh green beans this past week from the CSA, I knew I must have them in my belly!!  So my first intent was green beans, but then my refrigerator is way over flowing with vegetables that I wanted to use up, plus make some space in the fridge for leftovers and other goodies.  So in came the asparagus!

Asparagus and green beans make a great combo and cook relatively the same amount of time.  But I didn’t want an all green side dish, so  threw in some cherry tomatoes for some color.  I cooked everything together on the grill and man oh man!  The slight char from the asparagus and the steamed green beans with popping cherry tomatoes is so yummy.   I used some healthy, good for you lemon infused olive oil for a slight tang, and threw in some minced garlic for a little kick of flavor.  I’m telling you if you like these vegetables, combining them together is simply amazing!!  Your pallet will be very happy and so will the belly!

For the asparagus, I just placed them directly on the grates of my grill and turned them over every two minutes until they were slightly charred and fork tender.  They started to get a little wrinkly.  For the green beans I made a nice little foil packet and placed them in the packet with the cherry tomatoes, and cooked them for about 8 minutes, until the beans were slightly softened and the tomatoes were exploding.  This is really an easy dish, with just a little bit of preparation.  This is what my foil packet looked like.  I thought I would show you since my description in the recipe may not be great!

Grilled Asparagus with Roasted Green Beans and Tomatoes

A simple, light side dish made with lemon infused grilled asparagus, beans, tomatoes and parmesan cheese.
Serves: 4 servings
Ingredients
  • 8.8 oz. green beans (246 grams)
  • 12 oz asparagus
  • 1 cup cherry tomatoes
  • 1 tsp. lemon infused olive oil, divided
  • 1 tsp garlic, minced
  • aluminium foil
  • 1 tsp. Parmesan Cheese
Instructions
  1. Preheat grill to low to medium heat.
  2. In a bowl add green beans and tomatoes. Add ½ tsp. olive oil and garlic, mix well. NOTE: if you do not have lemon infused olive oil, just sprinkle vegetables with a pinch of lemon juice and olive oil. You'll want to add the lemon flavor.
  3. Create a foil packet, Use two square sheets of aluminium foil big enough to hold the vegetables, plus a little room to move. Place the beans and tomatoes in the center of one sheet, Place the other sheet over top of the vegetables and fold the edges together so the vegetables are sealed in. it will look like a big square.
  4. In the same bowl your vegetables were in, add asparagus and brush with remaining olive oil. I used my hands to rub the olive oil over the asparagus.
  5. Place the foil packet with vegetables over low heat, turning frequently. Cook for about 5 - 8 minutes; or until vegetables are tender. Take packet off grill and set a side.
  6. To cook asparagus, place directly onto grill grates over low heat, turning every two minutes until tender and they slightly start to wrinkle. Be sure not to burn them. About 5 minutes.
  7. After the asparagus are cooked, cut them into bite size pieces (I used my kitchen scissors) and place in a bowl with the cooked green beans and tomato mixture; give a little mix and top with some Parmesan cheese.

I just love grilling season!  I served this dish with roasted BBQ chicken.  It was so good!  As I am sitting here at my kitchen table and looking out my window the grill is sitting there, staring back at me!  I’m thinking roasted corn on the cob for dinner tonight!  I will say it again, I LOVE grilling season!

    Haha, I know those cranky-too-hungry moods all too well! Sometimes I’ll be scrolling through recipes and food blogs, just making myself even hungrier and being too lazy to actually do anything about it.
    I love grilled vegetables- and asparagus is so nice this time of year!

It’s time for my annual pumpkin bath picture. I It’s time for my annual pumpkin bath picture. I don’t know what it is, but I love to give pumpkins a bath. Don’t they look cute bathing in the sunlight with bubbles around them? lol

There are two methods that I have used  in the past; the chlorine bath and the dish soap bath. This is what I have learned.

My favorite and only way I wash pumpkins now is using dish soap.  It gets rid of the sap and makes them clean. I soak my pumpkins for about 20 minutes. The pumpkins will last until December. Plus if you keep your pumpkins after the holidays it will decay and grow pumpkins the following year. Plus it’s safe for animals that may nibble on your pumpkin.

The chlorine bath method will make your pumpkins last possibly up to a year. They take very long to break down and I never got my pumpkins to seed themselves. Plus it is not safe for animals in my opinion. Though Clorox Bleach says it’s safe, they just taste salty.

The key to washing pumpkins is to make sure that you get the area around the stem dry. You don’t want water around the stem. This could make your pumpkin rot sooner. So after the bath, dry your pumpkins off very good.

PS if you are in the Bay Area, I highly recommend going to @threenunnsfarm to get your pumpkins. They have a wide variety and the pumpkins and are .75 a pound. I bought all these pumpkins for $42.

I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.

I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.

I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long. 

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.

Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.

Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.

This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?
