Almost Sugarless Sugar Cookies

Hi Everyone and Happy Monday!

Today I have for you my first Christmas Cookie of the season and believe me it won’t be my last!  Hope you’re looking forward to several Christmas Cookie recipes, because your going to be getting them!  🙂   On Saturday, I made 6 different kinds of cookies, about 18 batches all together!!  Oh my gosh, talk about being cookied out!


These are my almost sugarless sugar cookie.  I added a sprinkle of Christmas sugar on top, that’s why they are almost sugarless.  These cookies are a soft sugar cookie that contain a nice crispy edge.  They are perfect little cookie to satisfy the sugar/cookie craving and contain absolutely no sugar, well except for the sprinkles, that’s optional, so I’m not counting that!  Another great thing about these cookies is that they don’t need to be refrigerated.  I hate refrigerating my cookies, when I want to make cookies, I want to make them now, not wait an hour or more!  I have no patience for that!  But if you choose to roll out the dough and make cut-outs, then I recommend refrigerating the dough for about an hour or two.

Your probably wondering where does the sugar-free part come from?   Remember when I made my Peanut Butter Cookie Granola last week?  Well I loved it so much that I contacted NuNaturals to let them know how much I love the Presweet Tagatose that I received from the giveaway I won.   They were so pleased that they sent me a HUGE bag of it, along with a cute note telling me to have fun creating cookies.  Woohoo!!  You know the first thought I got was a sugarless sugar cookie, how ironic.  lol   When using the Presweet Tagatose, I didn’t notice to much of a difference except that I needed to add a pinch more of it to my cookies to sweeten it up a tad bit since I have a major sweet tooth!  Even baking with it worked out great, I didn’t notice any difference in texture, size or taste of the cookie.  Plus a big benefit is that I didn’t get a stomach ache!  When I use fake sweeteners, I get such a horrible empty, acidy feeling in my stomach.  Presweet Tagatose doesn’t do that to me, or any of the NUnaturals Stevia.  Yah!

Sugarless Sugar Cookies

A sweet little cookie with a crispy edge and soft center.
Serves: 75 cookie
Ingredients
  • 1½ cups all-purpose flour
  • 1¼ cups white whole wheat flour
  • 1 tsp. baking soda
  • ½ tsp. baking powder
  • 1 cup softened butter
  • 1½ cups NuNaturals Presweet Tagatose or granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 tbsp. non-fat milk, divided
  • Sprinkles or colored sugar, for decorating (optional)
Instructions
  1. Preheat oven to 375 degrees F.
  2. In a small bowl, sift together flour, baking soda, and baking powder, set aside.
  3. In a large bowl, cream together butter and sugar until smooth. Beat in the egg and vanilla.
  4. Gradually blend in dry ingredients. Add enough of the milk (1 tbsp) to moisten the dough and make it soft, not wet.
  5. Roll rounded teaspoons of dough into balls and place on a ungreased cookie sheet. With a brush or fingers, moisten the top of each cookie with the remaining milk and slightly flatten the top of each cookie. Sprinkle with raw sugar or colored sprinkles.
  6. Bake for 7 to 10 minutes or until slightly golden. Let stand for 2 minutes before removing to cool on a rack.

NuNaturals was kind enough to also send me their new Chocolate NuStevia Liquid which works great in coffee!  I just add a few drops and a little milk and my coffee is perfect!  I can’t wait to experiment with it and see what else I can come up with.  I’m relatively new to the liquid Stevia’s so I am not sure how to use it, but I’ll figure it out.  If you have recipes using liquid stevia, do share them!!!

    My my favorite treat to bake are my grandmas sour cream Christmas cut out cookies. My girls love to help decorate and it is a fun thing to do! Good thing I only bake these once a year as they are not the most figure friendly!

    I like baking cookies. It doesn’t have to be the holiday season for that and my favorite are Chocolate chip. I am not much for store bought cookies as I think its a waste of calorie consumption. The real deal is a cookie that can soak up milk like a sponge but still remain chewy and intact!

Happy Wednesday! This past weekend I did a little Happy Wednesday! This past weekend I did a little furniture rearranging in my dining room. I decided to move my kitchen cart to the opposite side of my room, and I love it in its new spot.

If you remember, I fixed the nail holes in this wall, so I could hang a normal picture. I love how centered my nail is. lol It’s the little things.

Now before anyone says anything. I covered my light switch with my picture. I never use it, so it doesn’t effect me.

Speaking of pictures, how gorgeous is my sign from @krumpetshomedecor? It’s a fabulous size and I am calling it the moving sign. If you watched my reel last week, you will see that I used the spider side of the sign in my kitchen. I thought the fall side would be perfect in my dining room. Now I actually plan to move the sign again to my living room when I bring out the Fall bins. I have an idea in my head.

I actually have not changed any of the decor in the bathroom since February of this year. I love how it looks and didn’t want to change it.

The plants in the tub were in my living room, but with having puppies, they were eating them and they are poisonous, so I put them in the tub and they have survived and doing well.

The rug on the floor is from @studiomoutdoor. It’s a vinyl rug that is so perfect for cleaning up after the dogs. Plus they don’t eat these rugs! Yes, they have eaten all the rugs in my house, except for the dining room rug. Sigh….

Happy Friday Eve! So happy it’s almost the weeke Happy Friday Eve! So happy it’s almost the weekend. This Saturday we have to take the dogs to the vet. Oh man! That’s a thing. The dogs drop dead on the driveway and refuse to go in the car. They do this going there and back. It’s a comedy scene, and so embarrassing. Not fun! lol

I put together a little vignette for my kitchen counter. You are probably thinking, she always shares the kitchen. It’s because I do my day job at the kitchen counter and I get all these new ideas in my head and I just have to share.

I am loving the blue with the yellow and the green. It feels light and fresh. I also love my new candle from @candleberrycandle the scent is Bergamot Amber. It maybe my favorite scent from the collection. The scent is a mix of blue amber and oak with a vibrant burst of citrus and exotic florals.

I love the new look. It’s simple, has what we need and looks light and fresh. My husband actually noticed and said it was his favorite coffee bar yet. Then brings up how he hates the white fluffy stuff I use on the shelves for Christmas. I told him, I’m using the snow again this winter. He gives me the look.

Hi Everybody! Happy #tiptuesday. I am sharing with Hi Everybody! Happy #tiptuesday. I am sharing with you a simple way to make your floral displays last longer. I learned this trick from a local florist.

Ingredients:
4 cups of water (1 liter)
3 tbsp. Sugar
2 tbsp. Distilled Vinegar

Add sugar and vinegar to water. Stir until dissolved. Add flowers. Try to take off as many leaves as possible.

The sugar nourishes the flowers and the vinegar will stop bacteria growth.

After I put this arrangement together, I decided to take out the yellow flowers and cut the bouquet down a little. I think it looks better. I bought these flowers from the farmers market.
