Hi Everyone and Happy Monday!
Today I have for you my first Christmas Cookie of the season and believe me it won’t be my last! Hope you’re looking forward to several Christmas Cookie recipes, because your going to be getting them! 🙂 On Saturday, I made 6 different kinds of cookies, about 18 batches all together!! Oh my gosh, talk about being cookied out!
These are my almost sugarless sugar cookie. I added a sprinkle of Christmas sugar on top, that’s why they are almost sugarless. These cookies are a soft sugar cookie that contain a nice crispy edge. They are perfect little cookie to satisfy the sugar/cookie craving and contain absolutely no sugar, well except for the sprinkles, that’s optional, so I’m not counting that! Another great thing about these cookies is that they don’t need to be refrigerated. I hate refrigerating my cookies, when I want to make cookies, I want to make them now, not wait an hour or more! I have no patience for that! But if you choose to roll out the dough and make cut-outs, then I recommend refrigerating the dough for about an hour or two.
Your probably wondering where does the sugar-free part come from? Remember when I made my Peanut Butter Cookie Granola last week? Well I loved it so much that I contacted NuNaturals to let them know how much I love the Presweet Tagatose that I received from the giveaway I won. They were so pleased that they sent me a HUGE bag of it, along with a cute note telling me to have fun creating cookies. Woohoo!! You know the first thought I got was a sugarless sugar cookie, how ironic. lol When using the Presweet Tagatose, I didn’t notice to much of a difference except that I needed to add a pinch more of it to my cookies to sweeten it up a tad bit since I have a major sweet tooth! Even baking with it worked out great, I didn’t notice any difference in texture, size or taste of the cookie. Plus a big benefit is that I didn’t get a stomach ache! When I use fake sweeteners, I get such a horrible empty, acidy feeling in my stomach. Presweet Tagatose doesn’t do that to me, or any of the NUnaturals Stevia. Yah!

It’s kind of my secret way of letting them know I care about their health, without them actually knowing! I already slipped some in my Hubby’s frappe and he hasn’t noticed! 🙂
- 1½ cups all-purpose flour
- 1¼ cups white whole wheat flour
- 1 tsp. baking soda
- ½ tsp. baking powder
- 1 cup softened butter
- 1½ cups NuNaturals Presweet Tagatose or granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 tbsp. non-fat milk, divided
- Sprinkles or colored sugar, for decorating (optional)
- Preheat oven to 375 degrees F.
- In a small bowl, sift together flour, baking soda, and baking powder, set aside.
- In a large bowl, cream together butter and sugar until smooth. Beat in the egg and vanilla.
- Gradually blend in dry ingredients. Add enough of the milk (1 tbsp) to moisten the dough and make it soft, not wet.
- Roll rounded teaspoons of dough into balls and place on a ungreased cookie sheet. With a brush or fingers, moisten the top of each cookie with the remaining milk and slightly flatten the top of each cookie. Sprinkle with raw sugar or colored sprinkles.
- Bake for 7 to 10 minutes or until slightly golden. Let stand for 2 minutes before removing to cool on a rack.

I can’t wait to experiment with it and see what else I can come up with. I’m relatively new to the liquid Stevia’s so I am not sure how to use it, but I’ll figure it out. My my favorite treat to bake are my grandmas sour cream Christmas cut out cookies. My girls love to help decorate and it is a fun thing to do! Good thing I only bake these once a year as they are not the most figure friendly!

I like baking cookies. It doesn’t have to be the holiday season for that and my favorite are Chocolate chip. I am not much for store bought cookies as I think its a waste of calorie consumption. The real deal is a cookie that can soak up milk like a sponge but still remain chewy and intact!

I like to make a “Crazy Cake”. Chocolate cake using cocoa, chocolate pudding, chocolate chips, coffee, etc. with a peanut butter frosting. The cake ingredients are put in a bowl and beat all together for a couple of minutes.
