Pumpkin Soup / SBT / Giveaway

Hi Everyone,

I’m a little sad today!  🙁  Today is the last recipe that you will get from Skinny Bitch Tuesday.  I enjoyed meeting and getting to know the girls, Claire, Stephanie and Michelle.  For our last recipe, Stephanie chose Pumpkin Soup.  It’s a perfect recipe to say goodbye to Skinny Bitch Tuesday and a wonderful welcome into the Fall season.

This is the first time I ever made pumpkin soup and I am pleasantly surprised on how yummy it is!!  Well maybe not, after all I am obsessed with pumpkin!  Remember a couple of weeks ago I was making Pumpkin Puree and I said I wanted to go savory?  This is what I used the pumpkin puree for.  I will admit I really, really changed up the recipe from the cookbook.  The cookbook called for a 1/4 cup granulated sugar and 1 tablespoon of brown sugar, plus almond milk and white wine.  I didn’t add any of those ingredients into my soup.  I like my soup more on the savory side, rather than sweet.


I decided to add chicken stock, coconut milk and sage.  This soup was creamy, smooth, and savory.  I really loved this soup, it was a perfect addition to my dinner, which was my Turkey, Cranberry and Pear Panini.  It was the perfect Fall meal.

A creamy savory pumpkin soup made with onions, apples and fresh sage.
Serves: 5½ cups
Ingredients
  • 2 tbsp. butter
  • ½ cup onion, diced
  • ¾ cup (97 grams) apple, peeled and diced
  • 2 cups fresh pumpkin, roasted or canned pumpkin (not pie filling)
  • 1 tbsp. fresh sage leaves or ½ tbsp. dried sage
  • 3 cups chicken stock, low sodium
  • 1 cup unsweetened coconut milk (carton) or non-fat milk
  • Salt & pepper to taste
Instructions
  1. In a stockpot over medium heat, melt butter and saute onion, roasted pumpkin, and sage until all are tender, about 8 to 10 minutes. Puree the mixture with a hand emerser blender or pour in batches into a food processor or blender.
  2. Return the puree to the stockpot, add the chicken stock and simmer for 15 minutes. Then add the coconut milk and simmer for 5 more minutes, lowering the heat if necessary so it does not boil. Season, to taste, with salt and pepper.

    Definitely going to have to go with the chicken pot pie. It’s the ultimate comfort food for me and I used to love those frozen microwaveable ones growing up. These ones are so much better and unbelievably lower on calories 🙂

Hi Friends! I am absolutely loving Proven Winner Hi Friends! 

I am absolutely loving Proven Winners’ Truffula Pink Globe Amaranth (Gomphrena pulchella)! This is my first year growing it, and I’m already thinking it will be back in the garden next year. 💗

It has the cutest bright pink, globe-shaped flowers, and this little flower loves the heat! When temperatures hit the mid-90s, the Truffula Pink really shines. ☀️

Oddly enough, I don’t get many monarch butterflies in my garden, but I had some visit this week—and they were hanging out on the Truffula Pink Gomphrena! 🦋💗

For that reason alone, I’ll definitely be growing it again next year!

Look at this river of pink! Supertunia Vista Bubblegum by Proven Winners burst with flowers this week.

During July Garden tour, my petunias were looking sad, hardly any flowers. I said how disappointed I was. I followed all the Supertunia rules, spray with BT and fertilize. Then I made a little bit stronger concotion of BT Spray and a few days later, the plant rewarded me with beautiful pink blooms.

So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.

After reading reviews on a million refrigerators, they all seem like crap. I need your help! Do you have a refrigerator that you recommend?

I saw a Frigidaire one that we are debating on, but not sure? The reviews are good, but says, they were collected from a promotion. So I’m not sure how much I trust that? Anyway, any recommendations that you have would be great!

PS. Sorry mama hasn’t posted in a while. My brother Sully 🐶 who is a 2 year old Yellow Labrador has been diagnosed with Osteosarcoma (bone cancer) in March and has gone through radiation treatment and is currently doing chemo. He’s been really ill and mamas main focus has been taking care of him. She hopes to be back soon.
