Hello and Happy Wednesday!
Today I have for you another episode of Man vs Woman, Potato Style!!
If you have been reading my blog for a while, you will know that my Husband hates Sweet Potatoes, but I LOVE them! So I always try to make dishes where I can incorporate both of them. Now normally I wouldn’t make two separate mashed potato dishes, but I have the quickest easiest recipe for you! You can have mashed potatoes in like 5 minutes!! Talk about super fast!! Who ever heard of mashed potatoes in 5 minutes? I know what your thinking, I used instant potatoes. Nope, I used a real potato! Can you guess how I got these spuds so creamy?
Ready for this one? I microwaved them! I washed the potatoes, dried them off with a paper towel, poked a few holes in them, wrapped them back in the paper towel that I used to dry them with and placed them in the microwave and cooked them in two-minute increments, and cooked until tender. Depending on the size of the potato it took about 3 minutes for the sweet potato and about 5 minutes for the white potato. I let the potatoes cool for a minute, and then peel the skin. The skin comes right off. Then I placed the potato in a bowl and with my hand mixer, I beat them, while adding milk and spices. Oh my gosh talk about easy and delicious!! I love them!!!
For my Husbands mashed potatoes I used non-fat milk, salt, pepper and butter. It’s his favorite way of having them, with the addition of gravy! These potatoes are super duper creamy!! For the milk, you need to add it little by little to get the consistency you want. I think my Husband will be pleased with his potatoes.
- 8 oz rustic potato
- ¼ cup non-fat milk
- ¼ tsp. salt
- ¼ tsp. ground pepper
- 1 pat butter
- Scrub potato, dry with a paper towel and prick several times with a fork. Wrap potato back in the same paper towel that you used to dry it with and place in the microwave. Cook potato on high heat for about 2 minutes and then flip the potato and cook for another 1 - 2 minutes. Cook potato until is is softened.
- Let potato cool, until it's cool enough to handle. Carefully peel the skin away or cut down the center and scoop flesh out with a spoon. You can keep the skin on it you prefer.
- Place the potato in a bowl, and with a hand mixer beat the potato to break it up; add milk, butter and seasoning and beat until creamy. You may need to add more milk to get the consistency you want.
My sweet, sweet, sweet potatoes are simply sweet!! Sorry I can’t say sweet enough! I really loved them. These were probably the best mashed sweet potatoes I have ever had, not that I have had to many mashed ones. These potatoes were made with coconut milk, honey, salt, pepper, a pinch of cayenne pepper and cinnamon. Oh my gosh! They almost taste like dessert! I chose not to add any butter to the recipe because I didn’t think they needed it at all. The coconut milk was a perfect addition to the potatoes. Talk about creamy!!! One piece of advice, if you decide to make a sweet and white potatoes, be sure to make your white potatoes first. Heaven forbid if the orange gets in the white. 🙂

I hope you like today’s edition of Man vs Woman. If you’re a mashed potato fan, you really need to try this! There so good! I asked my Husband what he thought of them, and he asked why? Did you hide beans or yogurt in it? I told him nope! I told him I made them in the microwave and he told me he had no clue by looking at it or tasting it!! Kudos for me! This is really a nice side dish to make if your just making this for one or two people. Nothing worse than spending 30 – 45 minutes to make mashed potatoes! I think that is why I rarely ever make them except at holidays.

OMG I can’t believe I never thought of that!! I bake potatoes that way all the time! Such a great idea-and my boyfriend and I are like you & ur hubby, but flipped. Michael loves sweet potatoes but I don’t 😛
I thought this was pretty clever. I always have to find easy ways to incorporate or should I say separate the foods we like. This recipe worked out perfect for us!
Using coconut milk for mashed potatoes is such an intriguing idea- and my husband can’t stand sweet potatoes, either 🙂
Lol! My Husband freaks when I make french friesand I put a sweet potato in with his shoe strings! I do it on purpose because it’s funny to me!

I love coconut milk together with sweet potatoes and pumpkin!! It’s one of my new found favorite foods!!
I’m new here. (Found you on Pinterest) These are AMAZING!! I am a huge sweet potato fan, but they take so long to cook. This way is great. I used almond milk because I didn’t have coconut, and they taste awesome!

I often add a sweet potato diced in place of white potato in soups, stews. really good in veggie soup or chicken noodle soup. bumps up the goodness! even hubby will eat them that way.
