Doesn’t seem like time is going fast? I can’t get over that we are already into February. I seem to get up, go to work, come home, make dinner, go to bed. Sheesh, where does the time go? To give myself a little more time in the evening to do things I like, such as shopping, spending time with my dogs and Husband, and baking I came up with a really, super quick, three ingredient dinner. After all, as much as I love to cook, some nights I just don’t feel like cooking. So I have the worlds fastest dinner that is tasty and family approved. Let me share with you my Chicken Potsticker Soup.
If you like WonTon soup, I think you will really enjoy Potsticker Soup. It’s filling, low-calorie, easy to make and the noodles are just perfect! I made this many years ago and when shopping at Trader Joe’s, I saw Chicken Potstickers and thought I really need to make that soup again. It’s used to be a family favorite and I bet it still will be today! To make the meal more filling then just soup, I served it with a grilled cheese sandwich for the Hubby and a side salad for me.
I had leftovers so I brought a bowl in for me and a bowl for my friend Michelle. Michelle told me she really enjoyed it and ate it all up. So it is perfect the next day too! You can also make this soup vegetarian by using vegetable broth and vegetable potstickers. Actually you can use any kind of potstickers you like, such as beef or shrimp. I think this soup would really please just about anyone and it only takes 10 minutes to make. You know it’s done when the potstickers float to the top!
- 8 cups chicken broth, low sodium
- 21 chicken potstickers (16 oz pkg.)
- ¼ cup scallions
- In a large pot add chicken broth, potstickers and scallions. Set over medium heat and cook until potstickers are tender and float to the top; about 10 - 15 minutes.
I really love a quick meal like this and I love that it tastes just as good the next day. I was a little worried that the noodles would be to soggy, but they weren’t. Yah!!

You can buy it in the freezer section, normally with the Asian food or appetizers.

Girl, you know it was Trader Joe’s! I used TJ’s Chicken Potstickers and TJ’s Chicken Broth. Darn that TJ’s! lol

Make this a healthier meal by adding fresh veggies to the soup like zucchini, carrots, and onions! Also, homemade bone broth will really add some healthy points!

Absolutely a new family favorite! So very easy to make and we loved every bite! I added some minced garlic and fresh ground pepper to the soup as it was cooking. Fast, easy recipe for a nice meal after a long day at work or a lazy Sunday afternoon. Highly recommend this recipe!
