Pink Chocolate Chip Cookies

Happy Valentines Day!

Today I stepped out and changed up my Husbands weekly chocolate chip cookie recipe and made them pink!  My Husband looked at them and said they are weird-looking.  Ha ha  I think they are pretty and kind of punk rock looking.  I love the color of them!!  They are so bright and festive looking.  Here check them out for yourself.

Pretty cool, huh! I added Fuschia pink food coloring that I have, but I am pretty sure that adding some red food coloring will work just the same. They turned out fat and kind of light. I think the food coloring changed the consistency a bit. But they still tasted just as yummy!! I cant wait to hear the reactions when my Husband takes them to work.

I added the food coloring after I added the wet ingredients. I slowly added the flour in and added a drop more of food coloring while the flour was mixing. You need to do this to get the color you really want.  Just don’t go crazy on the food coloring, you want to taste the cookie, not the food coloring.

These cookies would make for a wonderful Valentine’s Day gift or if your feeling festive, just make them for yourself. To keep control of not eating them, after they cooled I froze them. I like to freeze my cookies. I just leave them on the counter and they defrost perfectly.

A light, fluffy pink cookie, chock full of mini chocolate chips.
Serves: 40 cookies
Ingredients
  • ½ cup butter unsalted (room temperature)
  • ½ cup sugar
  • 1 egg
  • ½ tsp. vanilla extract
  • 11/2 tsp. Fuschia pink food coloring or 4 drops red food coloring
  • 1¼ cups flour
  • ½ tsp. baking soda
  • ½ tsp. salt
  • ½ cup mini chocolate chips
Instructions
  1. Preheat oven to 350 degrees
  2. Line two baking sheets with parchment paper or Silpat; set a side.
  3. In a bowl, add flour, baking soda and salt; mix well; set aside.
  4. In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla extract and beat until combined. Add food coloring and beat until combined.
  5. Slowly beat in the flour mixture, just until incorporated. While mixing the flour, you can add a drop or two of more food coloring.
  6. Fold in chocolate chips
  7. Drop about a teaspoon size of batter on to prepared cookie sheets, abut 2" apart.
  8. Bake in oven for 8 - 10 minutes until bottom of cookie lightly brown. Let the cookies rest on baking sheet for two minutes, then let them cool completely on a cooling rack.

Pink Chocolate Chip Cookies
These cookies were really fun to make. I just love changing up a traditional recipe and adding some pop to it and these cookies pop! The color is just gorgeous! You can buy food coloring in festive colors at Williams & Sonoma and Micheal’s Craft Stores.

    Thank you so much for this recipe. I’ve been searching the pink cookies with chocolate chips recipe and all I’ve found so far required “strawberry cake mix” box from supermarket… until now.

    Not only that I cannot find “strawberry cake mix” where I live, I hate those over priced ready mix cake boxes. I mean, why would someone buy “cake mix”??? Because it’s quick and easy to use? Unless I can eat that cake once I open the box, it’s not “easy to use” for me. “Just add water, milk, oil, eggs ?!?! Heck! Basically, people are buying a box with just flour, sugar, and a little bit of baking powder and/or baking soda….That’s it! Wake up guys and girls! These simple/basic ingriedients are super inexpensive and easy to find and most people have them in their pantry already. Would you pay $4 for 2 cups of flour, 1 1/2 cup of sugar and 2 tsp of baking powder/soda ? Not me!

Look at this river of pink! Supertunia Vista Bubblegum by Proven Winners burst with flowers this week.

During July Garden tour, my petunias were looking sad, hardly any flowers. I said how disappointed I was. I followed all the Supertunia rules, spray with BT and fertilize. Then I made a little bit stronger concotion of BT Spray and a few days later, the plant rewarded me with beautiful pink blooms.

So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.

After reading reviews on a million refrigerators, they all seem like crap. I need your help! Do you have a refrigerator that you recommend?

I saw a Frigidaire one that we are debating on, but not sure? The reviews are good, but says, they were collected from a promotion. So I’m not sure how much I trust that? Anyway, any recommendations that you have would be great!

PS. Sorry mama hasn’t posted in a while. My brother Sully 🐶 who is a 2 year old Yellow Labrador has been diagnosed with Osteosarcoma (bone cancer) in March and has gone through radiation treatment and is currently doing chemo. He’s been really ill and mamas main focus has been taking care of him. She hopes to be back soon.

Hi Everyone! I hope you had a great weekend. I mus Hi Everyone! I hope you had a great weekend. I must say I was disappointed in the Super Bowl. I really wanted the 49ers to win. Anyway, this weekend I refreshed my guest bathroom.

I have to say my new favorite item is the towel holder. It’s so cute and practical. I don’t have a hand towel rack and I hated leaving my towels on my counter. I saw the towel holder from Target and had to get it. It’s the Hearth and Hand brand.

I added some bunnies for Spring and a touch of pink for some color. The hand towels are from Homegoods. They have so many bunnies and Easter decor. I had to control myself because I was with my husband. I may go back.
