Carrot and Pineapple Smoothie

Hi Everyone,

Happy Monday to you!  This week is a short week for me, and I LOVE it!  We do not get to many holidays off, but we do have Good Friday off and it will be a good Friday!  Next week I am going to Monterrey for work and I think I’ll be spending my Good Friday doing a little shopping.  I am in dire need of some capri’s and spring shirts.   Since last week I have been having fun with Smoothie Monday’s so today I have another smoothie for you today.  I figured we better start the week off on a good foot or a nice rabbit hop!  :)

Carrot and Pineapple Smoothie

I thought since this is Easter week that I would theme today’s smoothie after next weekends holiday.  If you don’t celebrate Easter, that’s ok too, you can still have a nice healthy smoothie that is light, filling, sweet and has a little bit of a tropical flair!

Carrot and Pineapple Smoothie

I actually based this smoothie off of  a Carrot Cake which I have been craving, but this doesn’t taste like carrot cake, it has more of a tropical taste to it do to the sweetness of the carrot juice and the pineapple.  It’s very good!  I picked up some fresh carrot juice from Trader Joe’s which was really tasty.  I never had carrot juice before and I was impressed on how it tasted and how sweet it is.  For my the milk, my Husband out of all people, found Dream Blends Almond, Cashew and Hazelnut Drink.  I didn’t find that it had to much of a nut taste, but that could be because I’m still fighting off this cold.   This drink will help with my cold too!  It has 110% vitamin C!

Carrot and Pineapple Smoothie Ingredients

This drink is perfect for a pick me up, a good dose of vitamins, which I’ll share with you in the recipe section  and perfect for when you’re in need of a nice drink to cool you off.

Carrot and Pineapple Smoothie

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: 2 Cups

Serving Size: 1

Carrot and Pineapple Smoothie

A light, healthy, refreshing frozen drink that is sweetened by pineapple and fresh carrot juice.

Ingredients

  1. 1/2 cup carrot juice
  2. 1 cup pineapple, frozen
  3. 1/2 cup Almond, Cashew Hazelnut Drink (or milk of choice)
  4. 1/8 tsp cinnamon, ground
  5. 1/2 cup ice

Instructions

  1. Add all ingredients in a blender, process until smooth.

I hope you are liking Monday Smoothies.  Since I have to make my recipes way in advance, so I have them for you next week, next weeks smoothie is going to be a sweet treat!  I have a crazy idea and I can’t wait to try it!  Here’s a hint, cake!  ;)  Hope it turns out.

  1. Hi, Jennifer – What a surprise to see your new design. It looks great! There is a bar to the left, though, that is placed just on top of the text, making it hard to read. It’s the rectangular bar with the buttons for Facebook likes, Pinterest, etc. I wonder if it’s only my computer or if anyone else is having this little glitch?

    • I have to do the green smoothies, I keep buying spinach, but then I forget to add it in! Oddly enough, my picky Husband likes my smoothies! But I give them to him when he’s working on his car, so he doesn’t give much thought into, just drinks it! Hey, I’ll take it! lol
