Spaghetti Squash with Tomatos & Random Things

Hi Everyone,

Happy Saturday to you!!  Today’s post is a little different from normal, I thought I would share with you some Random things that I found, I’m doing or just odd!  So here we go.

Random Things:

#1 – Spaghetti Squash – This is one that I love.  I tried spaghetti squash for the first time this year and I really like it. As you can see from the picture, it’s pretty small, perfect for one person and perfect for fend for yourself night.  Have you ever had spaghetti squash?  It’s not the most flavorful of the squashes, but it takes on good flavor.  I like substituting it for, well, my spaghetti.


#2 – Trader Joe’s Cinnamon Sugar Grinder – I love this stuff.  I use it in my coffee everyday.  It has the perfect blend of sugar and cinnamon.  I think it would be great on toast, ice cream and apples.  I am sure there is a lot more that this will go on.  I hope they carry it in the fall because I can think of hundreds of apple recipes that this would be perfect for.

#3 – Over ripe banana’s – I don’t know why they say there over ripe, there still green.  I plan on freezing some of these and using the rest for baking.  What do you think I should make with them?  I’m running out of ideas.

#4 – Sweet Potato – I had an organic sweet potato from Trader Joe’s and went to go use it and it was sprouting, so I thought what the heck, I might as well stick it in water and see what happens.  If it grows I’m going to plant it in my garden.  I wonder if I’ll get potato’s from it?  This is one week in the water.  It’s starting to sprout in the water.  I’ll keep you updated on the progress.

#5 – Lunch Lady Peanut Butter Cookies – O.M.G.!!  I bid on an auction for charity and I won a dozen Lunch Lady Cookies from the Spiffy Cookies.  All I can say is, I cheated, I had peanut butter today and it was worth it!  These cookies are great!!  Erin, wrapped them all individually just like a lunch lady would.  I’m going to eat like 10 of them and then freeze the rest and take them to work next week.  If you want to check out the recipe, you can go here.

#6 – Changing Vanilla Pudding – What the heck?  I saw this at the dollar store and I had to pick it up and show you.  What is it?  How does it change color?  I haven’t a clue.  It’s weird!  I don’t buy food from the dollar store, but I just had to get this, so needless to say, I will make it, just not sure when.  But when I do, I’ll share it with you.  How weird!!

#7 – A Planner – Finally I got a planner.  I have messed up on dates with everything, so in order for me to remember things like blog hops, giveaways, ect… I decided to get myself a planner.  At work, I do scheduling and with that, I am lucky if I remember what day it is!

#8 – Bad Boy – This is Sampson!  He’s my bad boy, but he’s so cute!  He loves to lay with his feet on the walls, strange little boy.  I was in the kitchen prepping my squash and he thought boring, so he decided to take a nap until I start making good things.

Well those are my random and strange things!  Now what did I do with that Spaghetti Squash?

I decided to cook the squash and make a simple tomato topping for it.  I wanted Italian, I wanted quick and I wanted healthy.  I got all that in this little dish.  Being that it’s squash, it’s full of fiber and it’s very filling.  I was debating on dessert, but I’ll pass thank you very much.  I served this with one of my whole wheat rolls.

Spaghetti Squash with Tomatoes

Ingredients:

1 small spaghetti squash, 245 grams

1 tsp. olive oil

1 tsp. garlic, minced

1 tomato, diced and seeded

1 tsp basil, fresh or ground

1 tsp. Parmesan Cheese

1 tsp. crushed pepper flakes (optional)

Directions:

Preheat oven to 375

Line baking sheet with parchment paper

With a skewer or knife prick the squash, all over. Place on a baking pan and bake for 45 – 60 minutes, rotating half way through.

Once squash is done, cut in half and with a spoon take out the seeds. Then with a fork scrap the sides of the squash. Place squash in a bowl.

In a small skillet, add olive oil and garlic, cook for about 30 seconds. Add tomato and cook until warm.

Add tomato mixture to squash. Add your basil and pepper flakes and toss. Top with cheese.

Serve and enjoy!

Calories:  142,  Fat:  6.3,  Cholesterol:  2.5,  Sodium:  97,  Potassium:  560,  Carbs:  20,  Fiber:  5,   Sugar:  6,  Protein:  3.7

    I enjoy spaghetti squash with pesto or just garlic salt and a little balsamic vinegar. Your dog is adorable. My white lab sleeps in all sorts of crazy positions and one is to have his feet resting on something.

      Oh, pesto sounds good with spaghetti squash!! I meant to pick some up yesterday, but I forgot!! Labs are funny creatures. My boy lab likes when you rub his feet and my golden hates when you touch her feet. I just love the different personalities.

      Your cookies are almost gone. My Husband stole 3 to take to work. My step-daughter took like 4 and I asked her, did you take my cookies? She said yah, I figured you don’t want the calories. Hello, there Peanut Butter Cookies! Calories don’t cont when someone else makes cookies! 🙂 So yes, we all LOVE them!!

    I literally just bought my first spaghetti squash yesterday! So happy I found your post 🙂 I’ve never cooked one before, I’m giving it a shot tonight! I’m a carb addict so I love the pasta substitution!!

      I love carbs so much it’s sickening! So the squash is a good sub, but it doesn’t taste like spaghetti, but it’s a great match up to pasta! It really picks up the flavor of your sauce. Oh and sauteing cooked spaghetti squash in olive oil, butter and sage is so good too!! If you have left overs you should try that!

    I LOVE spaghetti squash! Discovered it about 3 years ago and rarely use real pasta anymore.

    That color changing pudding actually scares me! Be very careful…I don’t want YOU changing colors from it! lol

      The changing pudding is weird isn’t it? Little Jenny said she’d eat it! Ick! I won’t because of calories and it’s freaky, but I want to make it, so I can see it change colors. Maybe today I’ll make it.

      I discovered squash about a year ago and I can’t get enough of it. I think butter nut and zucchini are my favorite!! My bad boy says “Thank You”.

    ok those cookies look *perfect*

    I’ve heard of “lunch lady” cookies before but I swear, they weren’t PB cookies…I need to investigate those.

    And that cinn/sugar grinder. Ive had that in my hands MANY times over the years but have never bought it. What have I been waiting for!

      All I know are those cookies are dangerous! My family loves them. I never heard of lunch lady cookies, so I’m not sure. Get the cinnamon and sugar grinder, you’ll love it! They would be great sprinkled on your roasted banana’s!!

    I haven’t tried spaghetti squash but I’ve heard great things and your recipe sounds delish. I’ll have to give it a try!

    I also need to look for that grinder the next time I’m at TJ’s – what a great find!

So this weekend our refrigerator broke. The freezer no longer works and the fridge is not getting cool enough. Ugh!! We bought our Whirlpool refrigerator about 4 years ago and spent near $3000 for it. It sure didn’t last long.

After reading reviews on a million refrigerators, they all seem like crap. I need your help! Do you have a refrigerator that you recommend?

I saw a Frigidaire one that we are debating on, but not sure? The reviews are good, but says, they were collected from a promotion. So I’m not sure how much I trust that? Anyway, any recommendations that you have would be great!

PS. Sorry mama hasn’t posted in a while. My brother Sully 🐶 who is a 2 year old Yellow Labrador has been diagnosed with Osteosarcoma (bone cancer) in March and has gone through radiation treatment and is currently doing chemo. He’s been really ill and mamas main focus has been taking care of him. She hopes to be back soon.

I have to say my new favorite item is the towel holder. It’s so cute and practical. I don’t have a hand towel rack and I hated leaving my towels on my counter. I saw the towel holder from Target and had to get it. It’s the Hearth and Hand brand.

I added some bunnies for Spring and a touch of pink for some color. The hand towels are from Homegoods. They have so many bunnies and Easter decor. I had to control myself because I was with my husband. I may go back.

I want to say sorry for lack of posting. It’s just so time consuming engaging. I hate spending countless hours on my phone. It has made me physically lazy and it hurts my eyes.
