Baked Cake Donuts

I asked Facebook, what goes with coffee?  I got allot of answers, but not the correct one.  Can you guess?  By the way, I kind of over did ordering coffee online, didn’t I?

But what else goes with coffee?  D’oh – I think Homer can tell you.

But of course Donuts!  Mmmmm, Donuts!  Don’t they look pretty together?

Yesterday I bought two donut pans from JoAnn Fabrics, and I got so excited with all the donuts I could make, I could barley sleep.  I have so many ideas floating around in my head, so be expecting many more donut recipes in the future!   But for today, I kept it basic, well kind of!  Check out PB&P’s Donut Shop!

I went crazy with decorating!  Now I am planing on PB&J Donuts, Maple Donuts, Apple Donuts, Blueberry, Pumpkin, Donuts and more in the future, but since this was my first time baking them, I stuck to simple.

This recipe is pretty easy, and it was quick!  It took me a little over an hour to prep, bake and decorate over 24 donuts, I made two batches.  And guess what?

There under 100 calories!  Well the cake part is, and I don’t think the frosting part is to bad,since it doesn’t take much to cover the donuts.

This is chocolate with sprinkles.  I made Poppers with left over batter. I just made them in my mini muffin pan.

The one in the left corner is my favorite, it’s raspberry filled, cinnamon sugar donut.  The one next to it is powdered and the one in front is glazed with blue sugar.  Each Popper is about 25 calories.  Not bad!

I just love the colors!  This was so fun!  Especially licking the bowls with the frosting.  To get your pans, check out JoAnn’s online and get a 20% off coupon or maybe even Michael’s has them?  They have a 40% off coupon online.  Just print them and go to your store.

The famous Homer Donut!  made with raspberry flavored glaze.

I like the Homer Donut with the pink plate.  By the way, you should eat these the day you make them.  I had a few left and I put them in tupperwear on the counter and the frosting started to melt.  So eat them the same day!!!  Donuts do not taste good the next day anyways!  Besides with these there probably won’t be any leftover.

My glazed donuts.  Just dip in melted butter and then dip in cinnamon and sugar.  there moist and delicious!  Ready for the recipe?

Baked Cake Donuts Adapted by Wiltons

2 Cups of Cake flour – sifted

1/2 Cup Granulated Sugar

2 Tsp. Baking Soda

1/4 Tsp. Ground Nutmeg ( I used ginger since I didn’t have nutmeg)

1 Tsp. of salt

3/4 Cup of Non-fat Milk – Splash of lemon juice to make buttermilk.  Just let it sit for 5 minutes

1/2 cup of egg Substitute or 2 eggs

2 Tbsp. of Melted Butter (I used Brummel and Brown)

Directions:  Preheat oven to 425°F.

Spray the 6-cavity donut pan with nonstick cooking spray.

Sift together cake flour, sugar, baking powder, nutmeg, and salt in a large mixing bowl.  Whisk in milk/buttermilk, eggs, and butter and mix until just combined. Fill each donut cup until about 2/3 full.  I put my batter in a ziplock bag, cut the corner and piped into mold.  Believe me it’s easier that way!  Don’t over fill the mold or it will cover the donut hole.

Bake 7-9 minutes, or until the top of the donuts spring back when touched. Cool in pan for about 4-5 minutes before removing from pan.  I baked mine for 8 minutes and they were perfect, don’t over bake or they will burn!

Complete donuts with either a dusting of powdered sugar, glaze, or cinnamon-sugar topping. Best served fresh on the same day.

Frosting:

For Cinnamon Sugar Topping:  Melt butter in microwave, and place in a shallow bowl.  In a separate bowl, add 1/4 cup of granulated sugar and 1 Tbsp. of ground cinnamon.  Dip donuts in butter and then dip in sugar mixture.  (this makes the donuts moist).

For Jelly filling:  Fill mini muffin pan 1/4 of the way full with batter, add your favorite jelly, then top with remaining batter.  Once cooked, dip in the Cinnamon Sugar Topping from recipe above. These were my favorite.

Glaze Toppings:  In a medium bowl, add 1 1/2 cups of powdered sugar, and about 3 tbsp. of milk and about 1/4 tsp of vanilla extract.  Wisk together.  If it is to hard, add more milk.  You’ll have to play around with the consistency.  For all these donuts, I still had left over glaze.

Put your glaze in shallow bowls and you can add food coloring, like I did for the Homer donuts, just 1 drop of red and a splash of raspberry syrup (I used Torani’s Syrup, that I use for coffee).  Dip your donut in the glaze and put on a rack to drip off any excess frosting. That was so simple and fast.  Add your sprinkles and toppings quickly so the glaze doesn’t harden on you.

Powdered Toppings:  I took my hand sifter and put powdered sugar in it and just shook over the donut.

Chocolate Frosting:  Take about 1/2 cup of  milk chocolate and melt in the microwave for 25 seconds, stir and them put back in microwave for 20 more seconds and stir until all melted.  Dip donuts in chocolate and then sprinkle with your toppings if desired.

    I was pretty impressed with these donuts, especially since it was my first ones.  The key things are, don’t over cook them, use cake flour so there light and fluffy and have fun decorating!  Kids would love to do this! Now time to pack them up!

    All sealed and ready to be dropped off at my Husbands work.

    My Husband thought I bought these donuts.  Now I was impressed with that!  Are you ready for the calorie count on just the donut part, not the frosting?

    Calories:  93
    Total fat: .7 grams
    Saturate Fat:  1 gram
    Polyunsaturated fat:  .3 grams
    Monounsaturated Fat:  .1 gram
    Cholesterol:  2.3 mg
    Sodium:  199.4 mg
    Potassium:  12.8 mg
    Carbs:  19 grams
    Sugar:  7.3 grams
    Protein:  2.3 grams
    Woohoo!  Barley any fat or calories!  Dunkins got nothing on me!!


    Have fun with these!  There quick and easy!  If I can make them, anyone can!  Now time to shop off the calories!  Enjoy!!

Hi Friends! I am absolutely loving Proven Winner Hi Friends! 

I am absolutely loving Proven Winners’ Truffula Pink Globe Amaranth (Gomphrena pulchella)! This is my first year growing it, and I’m already thinking it will be back in the garden next year. 💗

It has the cutest bright pink, globe-shaped flowers, and this little flower loves the heat! When temperatures hit the mid-90s, the Truffula Pink really shines. ☀️

Oddly enough, I don’t get many monarch butterflies in my garden, but I had some visit this week—and they were hanging out on the Truffula Pink Gomphrena! 🦋💗

For that reason alone, I’ll definitely be growing it again next year!

Look at this river of pink! Supertunia Vista Bubblegum by Proven Winners burst with flowers this week.

During July Garden tour, my petunias were looking sad, hardly any flowers. I said how disappointed I was. I followed all the Supertunia rules, spray with BT and fertilize. Then I made a little bit stronger concotion of BT Spray and a few days later, the plant rewarded me with beautiful pink blooms.

PS. Sorry mama hasn’t posted in a while. My brother Sully 🐶 who is a 2 year old Yellow Labrador has been diagnosed with Osteosarcoma (bone cancer) in March and has gone through radiation treatment and is currently doing chemo. He’s been really ill and mamas main focus has been taking care of him. She hopes to be back soon.
