Yum Yum Wednesday – Watermelon, Tomato & Goat Cheese Salad

Hi Everyone,

I have to tell you a secret!  I am on a serious watermelon kick!  Normally I like watermelon, I’ll eat it if it’s around, but lately I have been craving it.  It’s like, man I need me some watermelon!  With them coming in season, I thought I would share with you one of my favorite summertime salads; Watermelon, Tomato & Goat Cheese Salad.  This is such a simple salad to make that is made with of course watermelon, tomatoes, cucumber, mint leaves, goat cheese and your favorite balsamic dressing.  It is simply refreshing!  I served my salad in my watermelon for a pretty presentation.  Just core it out, drain out the liquid ( I drank it!  🙂 ), then fill your salad in your homemade bowl.  I think  that it is so cute, tasty, creamy from the goat cheese and just darn good!  You can get the recipe here.
