Happy Christmas Eve,
I know everyone is super busy today, hopefully not Christmas shopping, but wrapping presents, preparing meals and traveling to Friends and Family. So today I thought I would share with you the most decadent, rich hot cocoa I have ever made or had.
I thought with kids and chocolate lovers around this would be a perfect recipe today. Plus it’s great to pour into a mug and go out for a drive to look at Christmas lights. I have to tell you I am not kidding, but this is by far the most chocolaty hot chocolate I have ever had. It is thick, creamy, sweet and and ohhhh, the chocolate. It’s perfect!! Look at the dark, rich color it is.
The secret to making this hot cocoa so thick is the cornstarch and the coconut milk. I had just enough coconut milk in the fridge so I thought it would be perfect in hot cocoa. It doesn’t give it a coconut taste at all. If you do not have coconut milk, regular milk would work great!! The whole process to make the sweet goodness takes about 5 minutes.
I topped my hot chocolate with whip cream, a sprinkle of chocolate and a candy cane. If you want a peppermint hot cocoa, you can omit the vanilla extract and add about 1/8 tsp. of peppermint extract. That would be so good too!!!!
- 2 tbsp. unsweetened cocoa powder
- ½ tsp. corn starch
- ½ tsp. stevia or 2 tbsp. sugar
- ¼ tsp. vanilla extract
- 1 pinch salt
- 1 cup coconut milk, unsweetened from carton (regular milk will work too)
- In a sauce pan add all your ingredients and set over low heat; whisk until thicken and bubbly. Pour into a mug, serve with whip cream.
