White Chocolate Peppermint Mocha Cookies

Hi Everyone and Happy Wednesday!

Today I have for you one of my favorite, latest cookie creations I have ever made!  It is a replica of a White Chocolate Peppermint Mocha Latte.  Yup, tastes just like it!  I was shocked when I took a bite!

These cookies are a mix between a brownie and a cookie!  They are crispy around the edges and soft in the middle.  The cookies are made with cocoa powder, espresso and filled with white chocolate chips.  Before baking, I added a sprinkle of a chopped candy cane which gave it the mint flavor and a tiny little crunch in the center of the cookie!  Once they cooled, I drizzled white chocolate over the top.  Holy amazing!!!  Nothing beats a sweet, chocolaty cookie with a tiny candy cane surprise, a hint of espresso and topped with a smooth chocolate drizzle.


I loved these cookies so much, I gave them all to Jenny to take to her boyfriends house.  There was no way I could control myself with them around.  I’m kind of a cookie monster, no control!!!  But now that I have the recipe and it’s pretty quick to make, I’ll probably be making them soon!!  Hmmm, maybe tonight?

The cookies are really easy to make.  I melted butter in a pot, added the sugar and whipped in the rest of the ingredients   Scoop in a well sprayed mini muffin tin and baked for 10 minutes.  You must let them cool completely in the muffin tin to prevent them from breaking.  But don’t let that fool you, these are a pretty sturdy cookie and I think they would be great for shipping!

White Chocolate Peppermint Mocha Cookies

A sweet chocolate espresso cookie filled with white chocolate chips, sprinkled with candy cane pieces and drizzled with white chocolate. A perfect replica of a White Chocolate Peppermint Mocha Latte.
Serves: 24 Cookies
Ingredients
  • ¾ cup whole wheat pastry flour
  • ¼ cup unsweetened cocoa powder
  • 1½ tsp. espresso powder
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 8 tbsp (1 stick) unsalted butter
  • ½ cup light brown sugar
  • ¼ cup egg substitute or 1 large egg
  • 1 tsp. vanilla extract
  • ½ cup white chocolate chips
  • 1 candy cane, broken into pieces
  • ¼ cup white chocolate chips, melted
Instructions
  1. Preheat oven to 375°F.
  2. Generously spray mini muffin tin with nonstick cooking spray or line with paper muffin cups(spray the paper cups).
  3. In a small bowl, mix flour, cocoa powder, espresso powder, baking powder and salt; stir with a fork to combine.
  4. Melt butter in a medium saucepan over low heat. Remove from heat and stir in brown sugar. Let it cool slightly, then stir in egg and vanilla, stir until smooth. Stir in flour mixture, then white chocolate chips.
  5. Portion out about 2 tablespoons of batter into each muffin cup and smooth tops with a small spatula or back of spoon. Sprinkle with candy cane pieces. Bake until just set, about 10 minutes. Let blondies cool completely on a wire rack before removing from the pan.
  6. Once cool, drizzle the top of the cookies with white chocolate. I melted my chocolate in the microwave for 10 seconds, stirred and microwaved for 8 seconds, then stir until smooth. Then I scooped/poured the chocolate in to a plastic baggie, cut the corner and drizzled the chocolate over the top of the cookies. Let the chocolate set before touching.

You can sub 1 cup plain greek yogurt for butter, however the texture was chewy and more brownie like then cookie, but it still tasted good!

As I am writing this I want one of these cookies!!   I wonder if I should make another batch?  One thing about blogging, once you make something you eat it and your good!  Then you start to write about it and you want to have it again!!  Darn those cookies!!

    Could you swap out some of the butter with something else? I feel like an entire stick of butter is so much! They sound yummy!!!

      Maybe you could try coconut oil, or greek yogurt? Hmmm, I think I will try it this weekend with greek yogurt. I actually think that might work, I wouldn’t heat it thought, and I would probably add maybe 1 tbsp. coconut oil to it. I have to try this!!

Happy spooky Thursday! I added a few touches of Ha Happy spooky Thursday! I added a few touches of Halloween in my kitchen. I don’t do much Halloween decorations, but I just love to add it to the kitchen. Every time I go to the kitchen it makes me smile.

To add Fall or Halloween you don’t need to add a lot, just a few touches here and there. I will give a full tour in stories and tag a few items. Majority of the decor came from @krumpetshomedecor and the towels and bat banner from @theblessedpeach

I’m sharing with you the corner of my living room where I store my pumpkins that I grew before I can take them outside. It’s been too warm for them and I want them to last through October. They have been doing well, as they have been here since the middle of August.

I’m excited because this Saturday our local pumpkin patch will be opening. They have a huge variety of pumpkins and very inexpensive too. I’ll be stocking up. I just love this time of year.

Happy Monday! I want to thank those who have reach Happy Monday! I want to thank those who have reached out to me asking if I am okay. I am doing just fine. I’ve taken a little break from posting here because I have been busy on the dogs Instagram page. It’s hard to keep up on both. The dog page is so busy with birthdays, events and engagement. They have a busier social life than me.

I am sharing with you the last view of my kitchen before it is filled with Halloween. I spent 6 hours yesterday cleaning all the cabinets, appliances, sink and floor. I even did the windows. It sure tired me out. I’m not as young as I used to be. But it is so sparkly clean. I did put up my Halloween and I can’t wait to share with you. The dining room is the next room to conquer.

Happy Thursday! Here is a view of my garden that I Happy Thursday! Here is a view of my garden that I took a couple weeks ago. My garden really overgrew this season. I need to do some major work in it, but with the heat, it’s just unbearable to be out there too long.

I had a lot of zinnias self-seed this season which is cool, but they kind of took over. They crowded out some plants, so I need to get in there and pull some out. Plus being so crowded, they got powdery mildew. Yuck!

I’m thinking for the Fall making this area a little harvest pumpkin area. We will see. I have grand ideas in my head, but I don’t always follow through. lol

Hello Monday! This weekend I made a little charcut Hello Monday! This weekend I made a little charcuterie setup for my husband and I. This is something that I just love to do. I could just eat this type of meal all day long. 

I am sharing the “All White Collection” from @bzaar_wholesale. Each piece to the collection is so elegant and can be used all year round and would be gorgeous around the holidays.

The tray is made of marble with beautiful gold handles. The cheese knives are gold with solid marble handles and compliments the tray perfectly.

I used the marble flower shaped bowl for putting chocolates, but would be so stunning to use on your coffee table, side table and more.

The cake stand is has a marble base with Mother of Pearl edging and has a glass lid to go over the top. I will be putting my cakes and cookies on it in the future, but for now I used it to place my bruschetta.

You would laugh if you came into my living-room. Half my room is Fall, the other half is still coastal blues. lol I’ll eventually change it all out.

Let’s talk the art work. Isn’t it stunning? My husband never says anything about my decor, but he keeps talking about how much he likes the framed art from 12 Timbers. I agree, it’s so beautiful. It reminds me of when I lived back east and we would go to Letchworth Park in NY. The colors are stunning and goes perfectly with the burnt orange color that I’m using this season.

They started to grow early this season so it’s time to start picking. Unfortunately the massive one I showed you a couple weeks ago didn’t make it. It collapsed in the middle. Hello Tuesday! One of my favorite summer drinks is Hello Tuesday! One of my favorite summer drinks is a nice cold glass of lemonade. I like it a tad sour over sweet. It gives you the zippys in your mouth. I do love a good homemade lemonade, but once in awhile I like to cheat and just get my favorite store brand and add some freshly cut lemons and a few sprigs of mint. It then looks homemade when it’s not.

This is my outdoor dining area. I put the tablecloth over the table and have kept it like that all summer. I love my table, but being black, it’s extremely hot when you touch it. Plus it has water spots from last year which is annoying. Not sure how to get rid of them?

How I styled my bar cart is just an idea. Once I pull out my Fall/Halloween bins you will see these pieces in other parts of my home. The black wooden witches books will go in my kitchen to go with my black and white kitchen that I do every Halloween. The witches broom will also go on my shelf in the kitchen as my boys 🐶🐶 have been eyeing it up. I need to keep it away from them.

The beautiful reversible art work will go in my living room, as I like to do oranges and neutrals for fall. The 3 wooden pumpkins will go on my console table. I have it all planned out in my head. I’m kind of excited, but I will enjoy summer a little while longer.
