Black Burgers

A spicy, vegetarian black bean burger full made with corn, sweet bell pepper and a dash of cumin.
Serves: 5 burgers
  • 1½ cups black beans, canned, drained and rinsed
  • ¼ cup corn, frozen, thawed
  • ½ cup sweet bell pepper, sliced small
  • ⅓ cup onion, sliced small
  • 1 jalapeno pepper, roughly chopped
  • ⅓ cup whole wheat panko bread crumbs
  • ¼ cup egg substitute or 1 egg
  • ½ tsp. cumin
  1. Add black beans in a bowl, and lightly mash them. Add the remaining ingredients. Mix together with a fork; until incorporated.
  2. Form into 5 patties, approx 4 oz each. I got four 4oz patties and one 3oz patty.
  3. Place patties on a piece of parchment paper and refrigerate for at least 30 minutes or place in the freezer for a later use.
  4. To cook:
  5. To Grill - Spray a piece of aluminium foil with cooking spray and place on grill over medium heat. Cook each side of the burger for about 6 minutes.
  6. To fry: Place about 2 tsp. of olive oil in a pan over medium heat and cook each side of the burger for 4 - 6 minutes.
To cut the pepper, onion and jalapeno, I placed them in my mini food processor and pulsed it a few times until the vegetables were small.
