A creamy traditional tomato soup
Serves: 6 cups
Ingredients
  • 1 tbsp. butter
  • ½ cup onion, diced
  • 1 clove garlic
  • 1 28 oz can plum tomatoes, unsalted, undrained
  • 4 cups vegetable broth or chicken broth
  • ½ tsp. sugar
  • ½ tbsp. ground pepper
  • 1 tbsp. basil, dried
Instructions
  1. In a large pot, add butter, onion and garlic, saute for about 2 minutes. Add remaining ingredients; bring to a boil, cover and simmer for 10 minutes.
  2. With a hand immersion blender, blend until creamy.
