A healthy, sweet, moist quick bread made with pumpkin and little chocolate chips.
Serves: 15 slices
  • 11/2 cup whole wheat pastry flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 3 egg whites
  • ½ cup sugar
  • 1 cup pumpkin, canned not pumpkin pie filling
  • ½ cup unsweetened apple sauce
  • ¼ cup greek yogurt, plain
  • 1 tsp. cinnamon
  • ¼ tsp. ground nutmeg
  • ¼ tsp. pumpkin spice
  • ⅓ cup semi-sweet chocolate chips (I used mini chips)
  1. Preheat oven to 350F
  2. Spray 1 loaf pan or three mini loaf pans with cooking spray; set aside
  3. In a large bowl add flour, baking soda, and salt; mix and set aside.
  4. In a bowl, add egg whites and sugar, whisk together until incorporated. Add pumpkin, applesauce and yogurt. Whisk until combined. Add cinnamon, ground nutmeg and pumpkin spice; mix well.
  5. Make a well in the center of the flour mixture and slowly add the pumpkin mixture and fold together until combined. Do not over mix.
  6. Fold in chocolate chips.
  7. Evenly divide batter into prepared mini loaf pans or pour into one large loaf pan.
  8. Bake mini loafs for 30 - 35 minutes, bake large loaf for 50 - 60 minutes. Insert a toothpick into center of bread, comes out clean, bread is done.
  9. Let the bread cool for 5 minutes, then take loaves out and let them cool on a cooling rack.
