Apple and Cranberry Quinoa Salad
- 3 Tbs. (35 grams) apple, diced
- ¼ tsp lemon juice
- 1 tbsp dried cranberries
- 3 oz chicken, cooked, diced
- ½ cup quinoa, cooked
- 2 tbsp. balsamic dressing, fat free
- ½ oz goat cheese, crumbled
- 2 cups arugula
- In a small bowl add apple, lemon juice, cranberries, chicken, quinoa and 1 tablespoon of dressing. Mix until combined.
- On a plate add arugula, top with quinoa mixture. goat cheese and remaining 1 tablespoon of balsamic salad dressing.
