Spicy Buffalo Chicken Meatballs

A tender baked meatball made with ground chicken, wing sauce and blue cheese crumbles.
Serves: 14 2\\\" Chicken Meatballs
  • 1 pound ground chicken
  • 1 whole egg
  • ¼ cup Buffalo wing sauce
  • ½ cup whole wheat panko bread crumbs
  • ¼ cup blue cheese, crumbled
  1. Preheat the oven to 400 degrees F.
  2. In a large mixing bowl, combine ground beef, egg, wing sauce, bread crumbs and cheese. Using your hands, mix all ingredients until well combined.
  3. Using a food scale, weigh meatball mixture to 1.5-ounce portions (about the size of a golf ball). Roll into a ball and place each meatball into a mini muffin pan tin.
  4. Bake for 20 minutes or until golden and cooked through.
  5. Let them cool, Use immediately or freeze for future use.
