Peanut Butter Chip Yogurt Cookies

A light, fluffy cookie, made with greek yogurt and Reese's Peanut Butter Chips.
Serves: 30 Cookies
  • 1 cup whole wheat pastry flour
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ½ cup plain greek yogurt
  • 3 packets stevia (1½ tsp)
  • 3 Tbsp. brown sugar
  • 1 large eggs (I used egg substitute)
  • ½ tsp. vanilla extract
  • ½ cup Reese's Peanut Butter Chips
  1. Preheat oven to 375 degrees
  2. In a bowl add flour, baking soda and salt; set a side.
  3. In large bowl, yogurt, stevia and brown sugar; mix until blended. Beat in eggs and vanilla extract, mix until smooth. Gradually add flour mixture until combined.
  4. Stir in peanut butter chips
  5. Drop by well rounded teaspoons onto ungreased cookie sheets. Bake 6 - 8 minutes until lightly golden brown.
  6. Leave on cookie sheet for about a minute and place onto a cooling rack. I recommend storing in the refrigerator.
