A Chipotle bowl full of flavor and spices filled with black beans, corn, chicken, sweet potatoes. Makes for a quick and healthy lunch or dinner.
Serves:
1 Bowl
Ingredients
2 cups romaine lettuce, shredded
½ cup tomatoes, diced
¼ cup black beans
¼ cup corn
⅓ cup sweet potato, cooked
2 oz chicken, cooked
2 tbsp. salsa
2 Tbsp. greek yogurt
2 tortilla chips, broken up
Instructions
In a microwave safe bowl add beans, corn and sweet potato and microwave for about 1 minute or until warmed.
In a bowl add the lettuce, tomatoes, chicken, black beans, corn and sweet potato. Top with salsa, greek yogurt and chips.
