Thick, creamy soup made with cauliflower with hints of bacon and a little kick of heat.

Ingredients
20 oz pkg. Green Giant Cheddar & Bacon Mashed Cauliflower
1 tbsp. butter, unsalted
⅓ cup onion, chopped fine
1 jalapeno pepper, seeded, chopped fine
1 cup chicken broth, low sodium
2 tbsp. scallions, chopped small
Instructions
Take Green Giant Cheddar & Bacon Mashed Cauliflower and place 2 slits in the plastic, microwave for 7 minutes, carefully lift plastic, stir and cook for another 3 minutes. Let it sit for 1 minute.
While cooking the Green Giant Cheddar & Bacon Mashed Cauliflower, in a large sauce pan, melt butter. Add onion and jalapeno pepper and cook until transparent; about 3 minutes. Add chicken broth and bring to a simmer. Stir in cooked Green Giant Cheddar & Bacon Mashed Cauliflower. Once it starts to boil, turn off heat and let it rest for 5 minutes.
Pour into a bowl, add scallions if desire
Notes
I used a mini food chopper to chop onions and jalapeno. You can add additional cheese if desired. I just found the flavor perfect without the cheese.
