Caramelized Butternut Squash

Oven roasted Butternut Squash that has a sweet maple syrup and cinnamon glaze with just a hint of cayenne pepper for some heat and a pinch of salt and pepper for additional flavoring.

Ingredients
  • 9 cups (approx. 2.5 pounds) Butternut Squash, peeled, cut into cubes
  • 3 tbsp. Extra Virgin Olive Oil
  • 3 tbsp. Maple Syrup
  • ¼ tsp. Salt
  • ¼ tsp. Ground Pepper
  • ½ tsp. Cinnamon, ground
  • ¼ tsp. Cayenne Pepper
  • ¼ cup Dried Cranberries (Optional)
Instructions
  1. Preheat oven to 400 degrees
  2. Line two baking sheets with aluminium foil and spray with cooking spray.
  3. In a large bowl, add all of the ingredients, and mix until all the butternut squash is coated.
  4. Divide the butternut squash mixture between the two baking sheets. Place in oven and bake for 20 - 30 minutes, flipping half way through.
  5. Place in a serving dish and sprinkle with dried cranberries if desired. I think it makes a nice color contrast.
Notes
Make sure the butternut squash is cut about the same size. The smaller the pieces the quicker it cooks.
