Quinoa with Peppers and Onions

A healthy vegetarian quinoa dish that tastes like a mix between a stuffed pepper and chili. It has a slightly smokey flavor with a southwestern flair. It is great for lunches!

  • 1 cup tricolor quinoa (or quinoa of choice)
  • 2 cups water or vegetable broth
  • 1 tbsp olive oil
  • ½ cup onion, diced small
  • 1 tbsp. garlic, minced
  • 1 cup sweet bell pepper, seeded, diced small
  • 4 oz can green chilies
  • 14.5 oz. can diced tomatoes (un-drained)
  • ½ tsp. salt
  • ½ tsp. ground pepper
  • ½ tsp. chipotle chili powder or regular chili powder
  • ½ tsp. cumin
  • ½ tsp. oregano, dried
  • 1 tbsp. parsley, fresh, diced small
  1. Rinse quinoa. In a medium sauce pan, add quinoa and water. Bring to a boil; cover and simmer for 10 - 15 minutes, until water is evaporated. Mix occasionally.
  2. Meanwhile; In a large skillet add olive oil, and warm for 30 seconds. Add onion and cook for about 2 minutes until softened. Add garlic and sweet bell pepper and cook until pepper is tender; about 3 minutes. Add chilies, tomatoes, salt, and ground pepper. Mix well. Bring to a boil, and lower heat to simmer. Add chili powder, cumin and oregano. Cook for about 5 minutes; stirring occasionally. Turn off heat and add quinoa. Mix until well combined. Taste test it to see if you need more salt.
  3. Pour into serving bowl and top with fresh parsley.
