A light, creamy flavorful salad with tomatoes, avocado and onion.

Serves: About 4 cups
Ingredients
2 cups tomato, chopped into bite size pieces ( I used half cherry tomato & half plum tomato)
½ cup red onion, diced small
¼ tsp salt
¼ tsp. pepper
1 avocado, seeded, peeled, cut into bite size pieces
1 tbsp. lime juice
1 tbsp. parsley, fresh, chopped small
Instructions
In a bowl, add tomato, onion, salt & pepper. Mix until combined. Let it sit for about 5 minutes to get juicy from the salt. Add avocado, and lime juice, mix until combined. Mix in fresh parsley. Add more salt & pepper to taste.
Notes
Use a mixture of whatever kind of tomatoes you like.
