  • 3 tsp. cornstarch
  • 1 cup granulated sugar, divided
  • ½ cup brown sugar
  • 1 tsp. baking powder
  • 3 cups all-purpose flour
  • 1 cup (2 sticks) butter, cold, cut into small pieces
  • 1 egg, slightly beaten

  1. Preheat oven to 375°F.
  2. Lightly spray a 9 x 13-inch baking pan with cooking spray; set aside.
  3. In a medium bowl, combine blackberries, ½ cup granulated sugar and cornstarch. Stir gently; set aside.
  4. In a medium bowl, combine ½ cup granulated sugar, brown sugar, baking powder and flour. Using a pastry cutter, or two forks (I used my hands); cut in butter. Add egg and vanilla extract and mix until well combined and resembles coarse crumbs.
  5. Take half of the mixture and press into the bottom of the prepared pan.
  6. Add the blackberry mixture evenly over the crust. Crumble the remaining dough over the top of the blackberries.
  7. Bake for 45 minutes or until the top is lightly browned. Remove from oven and allow to cool completely before cutting.
