A tender pork that has been slow cooked in apple juice, onions, apples and sweet potatoes.

Ingredients
16 oz Pork Sirloin Tip Roast
1 large onion, peeled, roughly chopped
2 cups sweet potato, peeled, chopped into bite size pieces
3 medium gala apples, seeded, chopped into bit size pieces
1½ cups apple juice
½ tsp ground pepper
¼ tsp. salt
¼ tsp. thyme
¼ tsp. rosemary
dried cranberries (optional)
Instructions
In a large Crockpot, add pork and surround it with onions, sweet potatoes and apples. Top with apple juice and sprinkle with ground pepper, salt, thyme and rosemary.
Cook on low for 7-8 hours or on high for 5-6 hours.
Take pork out and slice it and place on a platter and drizzle with juices from the Crockpot. With a slotted spoon take the potatoes, onions and apples out and place in a bowl. Add a few dried cranberries if you desire.
