A simple, sweet smoky barbecue chicken salad made with black beans and corn.

Serves: 4
  • 1 lbs. chicken, skinless boneless, cut into bite size pieces
  • 1 tbsp. olive oil
  • 1 cup black beans, drained, rinsed
  • 1 cup corn, frozen
  • 1 7 oz. pkg. McCormick Smoky Applewood BBQ Chicken with Bacon Skillet Sauce
  • 8 cup romaine lettuce, chopped
  1. In a large skillet, add olive oil and chicken. Cook chicken until no longer pink; about 10 minutes. Add black beans, corn and McCormick Simmering Sauce. Cook for 5 minutes or until the corn is thawed.
  2. Evenly divide the lettuce between 4 plates and evenly top with chicken mixture.
