Recipe type: Salad
Serves: 4
  • 12 oz lean sirloin steak
  • 1 tsp extra virgin olive oil
  • Dressing:
  • 1 cup Dole blueberries, divided
  • ¼ cup balsamic vinegar
  • ½ tsp. sugar
  • ¼ cup extra virgin olive oil
  • Salad:
  • 4 cups Dole 50/50 Spring Mix and Baby Spinach
  • ¼ cup walnuts, roughly chopped
  • ¼ cup crumbled goat cheese
  1. Heat grill to medium.
  2. Rub steak with 1 teaspoon of olive oil and sprinkle pepper.
  3. Place on grill and cook each side for 6 minutes for medium cooked. Once cooked, take the steak off the grill and cover with aluminium foil. Let the steak rest for 5 minutes. Slice against the grain into thin strips.
  4. To make dressing: In a blender or food processor, add half a cup of blueberries, sugar and balsamic dressing; process until combined. With the food processor on, slowly add the olive oil. Taste it to see if you need to add a dash of salt and pepper.
  5. Between 4 plates, evenly divide the Dole 50/50 Spring Mix and Baby Spinach, cooked steak, walnuts, blueberries and goat cheese. Pour dressing over the top
For the cheese, you could also use feta or crumbled blue cheese.
