Lightened Up Cranberry Bliss Bars

Short bread cookie base filled with white chocolate chips and cranberries, topped with cream cheese frosting and drizzled with white chocolate.

Serves: 40 bars
  • 1 cup butter (2 sticks, very soft)
  • ½ cup brown sugar
  • ⅓ cup granulated sugar
  • 3 large eggs
  • 2 extract
  • 2 cups flour
  • 1½ tsp. baking powder
  • 1 tsp. ground ginger
  • ¾ cup dried cranberries
  • ⅓ cup white chocolate chips
  • 3 ounces cream cheese, softened (reduced fat)
  • 2 tbsp. butter, softened
  • 1 cup confectioners' sugar
  • 1 tsp. orange extract
  • ⅓ cup dried cranberries, chopped
  • 1 -2 tbsp. grated orange rind
  • ⅓ cup white chocolate chips
  • ½ tsp. canola oil
  1. Preheat oven to 350 degrees.
  2. Line a 9 x 13 baking pan with parchment paper; set a side.
  3. In a medium bowl add flour, baking powder and ginger; set a side.
  4. In a large bowl, beat the butter, brown sugar, granulated sugar until creamy. Beat in eggs and orange extract until just blended. Add flour mixture and beat until just combined. Stir in cranberries and chocolate chips. Spread batter evenly into prepared baking pan.
  5. Bake in oven for 15 - 18 minutes until lightly browned and center comes out clean with a toothpick. Let the bars cool in pan. Once cooled, take out of the pan, by grabbing the edges of the parchment paper.
  6. To make frosting: Beat together cream cheese, butter, confectioners sugar and orange extract; until light and fluffy. Spread frosting over bars.
  7. For topping: Sprinkle bars with cranberries and grated orange.
  8. Melt white chocolate chips and canola oil in a microwave safe bowl for 30 seconds, stir. Do this for 15 second intervals until chocolate is melted. Drizzle melted chocolate over bars.
  9. Let the bars rest for 30 minutes and cut into bars. To make signature Starbucks triangles, cut into 20 large squares (5 cuts by 4 cuts with the knife). Then cut each square in half diagonally to create triangles.
  10. I found they are best to keep in the refrigerator.
